View Full Version : need help finding broccili salad recipe

I am now thinking I must have dreamt this recipe because I cant find it anywhere! I recall I just saw this a few weeks ago, and I thought it was in a recent CL mag because and it was a reader its a reader recipe. It had cranberries in it along with I think mayo/yogurt/sour cream. and maybe nuts.
Has anyone seen this or I am I really losing my marbles?

Cranberry Broccoli Salad

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/4 cups fresh cranberries -- chopped
1/4 cup sugar
4 cups fresh broccoli florets
4 cups coleslaw mix -- (shredded cabbage with carrot)
1/2 cup chopped walnuts
1/2 cup raisins
1/3 cup finely chopped onion
6 slices bacon -- crisp-cooked, drained, crumbled
Dressing:
1 cup light or regular mayonnaise
1/4 cup sugar
1 Tablespoon vinegar
In a small bowl, combine the fresh cranberries and sugar; cover and chill in fridge until serving time (berries will juice out).
In a large bowl, combine broccoli, shredded cabbage, walnuts, raisins, and onion.
To make dressing, combine all ingredients in a small bowl. Pour over the salad and mix. Chill covered atleast 1 hour or up to 24 hours.
Just before serving gently fold in bacon and cranberry mixture.

Sunny Cauliflower Broccoli Toss

Amount Measure Ingredient -- Preparation Method

Dressing:
1/2 cup mayonnaise
2 Tablespoons sugar
1 Tablespoon cider vinegar
Salad:
2 cups cauliflower florets
2 cups cut-up fresh broccoli florets
1/4 cup raisins -- (can use more)
1/4 cup sliced green onions
1/4 cup shelled sunflower seeds
4 slices bacon -- crisply cooked and crumbled
In samll bowl using wire whisk, blend all ingredients for the dressing. Chill.
In large bowl, combine all salad ingredients except for bacon and sunflower seeds; toss lightly.
Pour dressing over salad mixture; toss lightly to coat. Chill several hours.
Sprinkle with sunflower seeds and bacon and stir. Serve.

Linda, the first one is it I am almost sure. I bought bacon last week-end and couldnt then remember why I bought it. (this is getting scary) Now that I think of it I was at the Dr last week and going thru their mags and thought I would make it in the next few days and it looked easy enough to remember
