I know this is a very old recipe - from April of 1998 - but I had to post my review anyway. I made the cookies to bring into work yesterday and they were fabulous. They are unbelievably easy to make and no one suspected that they were low fat. They are incredibly moist and yummy. I highly recommend them.

Chewy Chocolate-Chip Cookies

2 1/4 cups all-purpose flour
1 teaspoon baking soda
1/4 teaspoon salt
3/4 cup packed brown sugar
2 tablespoons light butter
1 teaspoon vanilla extract
4 large egg whites (at room temperature)
1/2 cup granulated sugar
1/3 cup light-colored corn syrup
1 1/4 cups semisweet chocolate chips
Cooking spray

Preheat oven to 375º.

Lightly spoon flour into dry measuring cups, and level with a knife. Combine flour, baking soda, and salt. Beat brown sugar, butter, and vanilla extract at medium speed of a mixer until well-blended (about 5 minutes).

Beat egg whites until foamy using clean, dry beaters. Gradually add granulated sugar, 1 tablespoon at a time; beat until soft peaks form. Add corn syrup; beat until stiff peaks form. Fold brown sugar mixture into egg white mixture. Add flour mixture; stir in chocolate chips.

Drop by level tablespoons 1 inch apart onto baking sheets coated with cooking spray. Bake at 375º for 10 minutes or until golden. Remove from oven, and let stand 5 minutes. Remove cookies from pans, and cool on wire racks. Store loosely covered.

Here is the recipe:
It is so easy!!
When I made it I even substitued egg beaters for the egg and egg beaters brand egg whites for the egg whites and they still turned out great.

The batter is a bit sticky but don't fret they cook up wonderfully.

Chewy Chocolate Cookies

1 (18.25-ounce) package light devil's food cake mix
2 tablespoons stick margarine or butter, softened
2 tablespoons water
2 large egg whites
1 large egg
3/4 cup semisweet chocolate chips
Cooking spray


Preheat oven to 350`. Combine first 5 ingredients in a large bowl; beat at medium speed of a mixer 2 minutes. Stir in chocolate chips. Drop by rounded teaspoons 2 inches apart onto baking sheets coated with cooking spray. Bake at 350` for 10 minutes. Remove from pans; cool on wire racks. Store in an airtight container.
Yield: 5 dozen (serving size: 1 cookie).

Double-Chocolate Chews

Amount Measure Ingredient -- Preparation Method

1 3/4 cups all-purpose flour
2/3 cup sifted powdered sugar
1/3 cup unsweetened cocoa
2 1/4 teaspoons baking powder
1/8 teaspoon salt
1 cup semisweet chocolate mini-morsels -- divided
3 tablespoons vegetable oil
1 cup firmly packed brown sugar
2 1/2 tablespoons light-colored corn syrup
1 tablespoon water
2 1/2 teaspoons vanilla extract
3 egg whites
Vegetable cooking spray

INSTRUCTIONS:
Preheat oven to 350 degrees.

Combine first 5 ingredients in a bowl; stir well, and set aside.

Combine 3/4 cup chocolate morsels and oil in a small saucepan; cook over low
heat until chocolate melts, stirring constantly. Pour the melted chocolate
mixture into a large bowl, and let cool 5 minutes. Add brown sugar, corn
syrup, water, vanilla extract, and egg whites to chocolate mixture; stir well.
Stir in flour mixture and remaining chocolate morsels.

Drop dough by level tablespoons 2 inches apart onto baking sheets coated with
cooking spray. Bake at 350 degrees for 8 minutes. Let cool 2 minutes or until
firm. Remove cookies from pans; let cool on wire racks. Yield: 4 dozen
(serving size: 1 cookie).

Mamasue - The recipe you posted for the Double Chocolate Chews caught my eye earlier today - I had to try them. They are very yummy! My DH really liked them and my 2yr. old gave his approval with a big chocolatey grin!

Mamasue, another thank you for recommending those cookies! I just made a batch and they are indeed very yummy! Definitely fudgey and brownie-like.

My daughter just made the Double-Chocolate Chew cookies posted by Mamasue (also in the CL Complete Cookbook) and they were fantastic! I have a high-fat recipe that is similar and from now on I will make the CL version instead. Yum!!
