Hi! Do you any any great couscous recipes? I want to find some for quick lunches and sides to dinner. Thanks!

Here is a very simple, but good couscous recipe - obviously you can add/delete whatever - I really like this and lasts well in the fridge.
Mediterranian Salad
1 cup couscous
chopped tomatoes
green onions
1 can red kidney beans
feta cheese (crumbled)
pine nuts
Add:
1 tbsp olive oil mixed with 1 tbsp lemon juice, and 1 garlic clove crushed
Make the one cup of couscous accordingly, add however many tomatoes, onions, feta cheese, pine nuts you like and of course the kidney beans.

This is really yummy.
Couscous Fruit Salad
1 1/4 cup pineapple-orange juice (I added the juice from the can of pineapple to regular orange juice)
1/4 teaspoon cinnamon
1/4 teaspoon mace
1 cup couscous
1 cup pineapple chunks, drained
1 banana, sliced
2 teaspoons lemon juice
1/2 avocado, chopped
3 tablespoons toasted almonds
Heat pineapple-orange juice, cinnamon and mace in a saucepan until boiling. Stir in couscous. Cover and remove from heat. Let stand 5 minutes. Spoon in pineapple chunks and pour into a serving bowl. Top with banana slices. Sprinkle banana slices with lemon juice. Top with avocado and almonds.
Serves 6.

Did you try any of the couscous recipes in the June 2000 issue? I tried most of them and really was pleased with the result. My favorites were Chicken-Avocado Couscous Salad with Tomatillo Dressing, Fresh Mozzarella, Tomato and Basil Couscous Salad, Nectarine and Chickpea Couscous Salad with Honey-Cumin Dressing, and Sesame Shrimp and Couscous Salad. All would be great for quick lunches.

To second Peggy's comments, the couscous dish with the chickpeas and nectarines in it is wonderful! (I did double all the dressing ingredients except the salt as I thought the salad seemed too dry.) I have made it several times this year.

Couscous With Mushrooms and Sun-dried Tomatoes

2 teaspoons olive oil
1 onion -- chopped
1/2 cup sun-dried tomatoes -- not packed in oil, snipped into strips
2 cups mushrooms -- sliced
1 teaspoon dried thyme
2 1/2 cups low-sodium chicken broth -- defatted
1 dash hot sauce
1 1/2 cups couscous
1 tablespoon fresh parsley -- chopped
1/8 teaspoon salt -- or to taste
1/8 teaspoon freshly ground black pepper -- or to taste
In a large saucepan, heat oil over medium-high heat. Add onion and tomatoes and stir until the onion is softened, 2 to 3 minutes. Add mushrooms and thyme and stir until the mushrooms give off their liquid and begin to soften, about 5 minutes. Add chicken broth and hot sauce and bring to a boil. Stir in couscous. Remove from the heat and cover. Let stand until the liquid has been absorbed, about 5 minutes. With a fork, fluff the couscous and stir in parsley. Season with salt and pepper to taste.
