First, let me say that I did try to search, but it kept timing out so I have no idea what has been posted on this topic already.
Now, I bought six over-ripe bananas from the reduced produce rack yesterday. I was going to make banana bread, but then I thought that you guys must have some better and more creative ideas than that! Let's hear them....please;) .

Chrisi posted these before and they're very good. I make them in the loaf shape, rather than as muffins.

1 1/4 cups all-purpose flour
1 1/4 cups whole wheat flour (can use all white
flour)
1/2 cup sugar
1/2 cup packed brown sugar
1 tablespoon baking powder
3/4 teaspoon salt
1/4 teaspoon cinnamon
2 ripe large bananas -- mashed
1 cup skim milk
3/4 cup smooth peanut butter
1 tablespoon canola oil (original recipes uses 3 T.) -- can also be made with no oil
1 teaspoon vanilla
1 large egg
1 cup milk chocolate chips
In a large bowl stir together flour, sugars, baking powder, salt, and cinnamon. In another bowl combine mashed bananas, milk, peanut butter, oil, vanilla and egg. Add to flour mixture, stirring until just combined. Stir in chocolate chips. Pour batter into two greased loaf pans or muffin tins. Bake at 350 F for 50 to 55 minutes (check at 40 minutes!) or until a toothpick inserted near the center comes out clean.
Makes 2 loaves or 18-24 muffins

Make 2 loaves of banana bread. :D
BTW, you can freeze bananas. I just pop them into the freezer in the skins. The skins turn black, but you can just thaw, snip off the end, and squeeze the banana out the end. Yes, the are mushy and look gross, but they are great for baking.
Banana pancakes are also good.

Banana-Pecan Biscotti
From Cooking Light
1 3/4 cups all-purpose flour
1/2 cup sugar
1 teaspoon baking powder
1/4 teaspoon salt
1/3 cup mashed very ripe banana (about 1 banana)
1 tablespoon vegetable oil
1 teaspoon vanilla extract
1 large egg
1/3 cup chopped pecans, toasted
Cooking spray
Preheat oven to 350°.
Lightly spoon flour into dry measuring cups, and level with a knife. Combine the flour, sugar, baking powder, and salt. Combine banana, oil, vanilla, and egg in a medium bowl; stir in flour mixture and pecans (dough will be sticky).
Turn dough out onto a lightly floured surface; shape dough into 2 (8-inch-long) rolls with floured hands. Place rolls on a baking sheet coated with cooking spray; flatten to 1/2-inch thickness.
Bake at 350° for 23 minutes. Remove rolls from baking sheet; cool 10 minutes on a wire rack. Cut each roll diagonally into 12 (1/2-inch) slices. Place slices, cut sides down, on baking sheet. Reduce oven temperature to 250° bake 15 minutes. Turn cookies over; bake an additional 15 minutes (cookies will be slightly soft in center but will harden as they cool). Remove from baking sheet; cool completely on wire racks.
Yield: 2 dozen (serving size: 1 biscotto)

My mom's housekeeper/companion makes her simple milkshakes with milk, vanilla ice cream and an over-ripe banana. I shared one last week and it was GOOD.
