Does anyone have a recipe for Girl Scout like Thin Mint cookies using Ritz crackers? I found a recipe on CopyKat.com using a cake mix and other ingredients, but am looking for the specific recipe using Ritz crackers. Thank you in advance.

at a cookie exchange last year that I was unprepared for (these are quick and easy). I use the low sodium Ritz and
just dip them in chocolate melted with a few drops of peppermint flavoring. Then put them on wax paper and

well, I made both varieties around Christmas and I was the hero around this house!
I didn't believe they'd taste that real, but they did!

How vital is it to have the paraffin wax in the melted chocolate?

Laura B-I don't think the paraffin wax is that vital. I think the main reason is to make the chocolate shiny. You can also use a tablespoon or so of shortening to achieve the same purpose. Someone please let me know if I'm wrong about this!

slknight - I think you're right about the shiny part. I also think that parrafin is supposed to make the chocolate a bit thinner so that it's easier to coat. I know that I sometimes have problems with the chocolate being so thick that it doesn't coat things nicely.

I have had similar cookies without the mint but with peanut butter between to Ritz crackers. Yummy! All you do is put 11.5 to 12 oz of chocolate chips with 3/4 cake of paraffin wax in a double broiler and let it melt and start dipping. I'm going to have to make these soon.....
