Hello Miss Emilycat~ I know this seems strange for me to "hunt" you down, but I thought I'd give it a whirl. I noticed you have the lemon pudding cake from Moosewood as one of your favorites. I was also going to try it, but all those eggs seems a bit much! Like you, I reduce fat whereever possible. Do you think I could use egg beaters? Just wondering...thanks so much. How's the training? Hope you're eating plenty of protein : )

Actually, I think because it's a pudding cake that separates into two layers, that egg beaters wouldn't work. You only need two egg yolks, if that's what you're worried about, and beating the whites until they're stiff is one of the most important factors...so, there's no harm in trying, but I don't think it would work that well.
