We tried this last night and SO gave it a 9! I did a couple of substitutions: nonfat milk for the 1% milk and a little more than 1/4 cup egg substitute for the large egg. I had to make the substitutions, because I also put about 4 oz. shredded reduced fat sharp Cheddar cheese on top when it was done. I broiled the cheese to get it to melt, although just leaving it in the oven a while longer would have worked just as well.
What I found surprising was the chipotle sauce. I found Bufalo brand chipotle sauce in a thin, tall bottle with (appropriately enough) a red buffalo on the label. The sauce was labeled "very hot," so I was hesitant about using an entire tablespoon. I decided that my taste buds aren't so important after all and tried the full amount anyway. Well, the sauce added a wonderful smokiness to the dish, but wasn't hot at all. (Last month I made about 4 quarts of Mexican Chicken-Corn Chowder and added 4 drops of Shotgun Willie's hot sauce, and everyone said that the soup was at the limits of their tolerance for spiciness.) So, if you use Bufalo chipotle sauce, its bark is definitely worse than its bite!
