View Full Version : Seared Pork with Cranberry-Orange Sauce

We had this for dinner tonight, along with roasted red potatoes and steamed broccoli. The pork was excellent, one of the best pork chop recipes I've made/had. The pork was very tender, and I loved the sauce. I was afraid it would be too sweet, but it was nice and balanced by the soy sauce and orange juice.

This is from the J/F 2003 issue, which I discovered in the annual. I did not find a thread on this recipe, which is surprising, as it is so yummy! (I'm not the best searcher, though, so there may be one out there) Here's the recipe, with my changes noted at the end.

Seared Pork with Cranberry-Orange Sauce

Amount Measure Ingredient -- Preparation Method

1/2 cup cranberry sauce -- whole berry
3 tablespoons soy sauce, low sodium
2 tablespoons orange juice -- not fresh
1 tablespoon honey
1 teaspoon ground ginger
1/4 teaspoon salt -- divided
1 tablespoon olive oil
Cooking spray
4 pork center loin chops -- boneless, 1/2-inch thick, 4 ounces each
1/2 teaspoon dried rosemary
1/4 teaspoon ground black pepper
1/3 cup white wine -- dry

Combine first 5 ingredients and 1/8 teaspoon salt.

Heat oil in a large skillet coated with cooking spray over medium-high heat. Sprinkle pork with 1/8 teaspoon salt, rosemary, and pepper. Add pork to pan, and cook 4 minutes on each side. Remove from pan.

Add wine to pan, scraping pan to loosen browned bits. Stir in cranberry mixture; return pork to pan. Bring to a simmer; cook 2 minutes or until pork is done.

This is an excellent pork dish! Very tender, and we loved the sauce.

I used thyme instead of the rosemary, and chicken broth instead of wine.
