question about veggie lasagna in J/F 01

I am planning on making this lasanga this week, and it makes enough to fill an 8in baking pan. Do you think I can double it and use an 11 by 17 in dish??

An 8" square pan has 64 square inches...an 11"x7" pan only has 77" so that's really not big enough to double unless you want a much thicker lasagna. A 13x8 might be better, but still the lasagna will be thicker with 104 square inches. Hope that helps...i always half the Cooking Light casseroles since it's just my husband and I and end up making ones designed for 8" squares in small pyrex bowls, which really makes me use my area math!!
