View Full Version : Anyone Try the Roasted Chicken With Wild Rice Soup???

I want to make this for a luncheon I am hosting on Thurs. I was wondering if anyone has attempted this yet? Also, can't I just poach the chicken? I know the inventor of this recipe used leftover roasted chicken. I really don't want to have to buy a precooked chicken. Do you think poaching it would take away alot of flavor?? Please reply!!!

There was a thread on this a couple of weeks ago; several folks, including myself, had tried it and liked it. As for the roast chicken, I just took boneless skinless breasts, sprinkled with some herbs, and baked in the oven. I think it would have been better had I used bone-in breasts with skin and boned and skinned them after baking. I do think the soup would benefit from the depth of flavor of roasting or baking instead of poaching. This recipe makes a lot; several of us in the previous thread were wondering if it would freeze well. So let us know if you freeze any! Betsy

I made this two weekends ago and liked it. It is easy and hearty. I used leftover turkey (the last of the Christmas turkey, it had been frozen) but I think it would be fine with the poached chicken. As for freezing, I didn't freeze it (we had enough for two meals and a couple of lunches for me). I usually shy away from freezing soups that contain milk but since it is evaporated milk and only one can it might work. I too would be interested to hear if anyone freezes this.

I did poach the chicken breasts when I made it and it was fine. I did freeze the leftovers, but haven't used any yet. I agree, sometimes milk based soups don't freeze so well. I'll try to post when I defrost and let you know how it went. The soup is excellent, but a little thin for my taste. It might be because I added some extra homemade stock. I might have had too much liquid for the amount of flour used. It is good and I would repeat it. I would love to have it served to me at a luncheon. A nice lettuce salad and bread, yum.

I too agree with everyone else...This soup was tasty and made great leftovers....I added a little hot sauce to give it some kick..... http://www.cookinglight.com/bbs/biggrin.gif

I thought this soup was really good. I too used boneles breast which I sprinkled with salt and pepper then baked in some chicken broth in the oven. I liked it also because I cooked the chicken one day then made the soup the next.

I just finished the last bowl of this soup for lunch today. I have to agree with the above comments...it is a nice tasty soup. Although I will definitely make it again there was a soup very similar to this a little over a year ago that was even better. It was in an issue around or immediately after Thanksgiving because it called for the leftover turkey(darkmeat), but as I recall I just used some leftover rotisserie chicken from the store. I don't have my recipes handy now, but I can try to post later. It also had the Uncle Ben's rice mix, some cream cheese, scallions, and mushrooms.
