I'm going to try this with a cheese filling...
does anyone know if I can gut the little tomatoes and fill them a day in advance?

I wouldn't, but that is just me.

If you gut them and fill them in advance, then you will (obviously) have to store them in the fridge. and tomatoes lose a lot of flavor when they are stored in the fride.

I agree with Val (as usual!) - I think tomatoes also lose something in texture when they're chilled.

Maybe if you put them on a cookie sheet or in a dish and put plastic wrap over them? I wouldn't do them any farther ahead than necessary.

I misread your post and thought you wanted to know HOW to gut them and a melon baller came right to mind. :D

I'd go ahead and do it, only because I personally don't think tomatoes lose that much flavor in the fridge. (They do, a bit, but it's not like you're storing them in there, right?)
