View Full Version : Penne w/Green Beans, Sun-Dried Tomatoes Question???

I am considering making this (Penne w/ Green Beans, Sun-Dried Tomatoes and Toasted Breadcrumbs from Sept. 2000) mostly because I have a bunch of sundried tomatoes and since I'm going to be moving across the country soon, I want to use up as much of my staples as I can. My question is that I don't have capers and obviously don't want to buy any now. I don't have any olives either. Do you think this recipe might be ok without them?
If not, what besides this and the Sundried Tomato Semolina biscuits (which were really good, BTW) can I make with these dried tomatoes that's vegetarian?

Depending on how vegetarian, I have had a sun-dried tomato pizza with the tomaotes, basil and cheese! YUM!
I dont think the lack of capers would kill your recipe in this case, just maybe use xtra spices to keep the flavor! http://www.cookinglight.com/bbs/smile.gif

we tried the penne w/ green beans and it really wasn't that great or worth the trouble. i think you'd have more luck using your sundried tomatoes if you just toss them in with some pasta and fresh herbs. putting them on pizza is a great option too. we put them into everything, even salads. good luck with your move! http://www.cookinglight.com/bbs/smile.gif

I don't know the recipe that you're talking about - but I always toss pasta with sun dried tomatoes, green beans, toasted pine nuts, fresh basil, garlic, maybe sliced red pepper, maybe goat cheese or parmesan - pretty much whatever I have on hand & it's good. Pizza is a great way to go. Calzones too. Or add the sun dried tomatoes to a marinara sauce - it adds a good flavor to it.
As far as capers go - maybe add a little lemon juice to replace the tang of the caper.
