Wendy W- I am putting the pot roast in the crockpot on low at 7:30AM, will it be too long if I don't get home until 6:00PM? If it is, either my husband or myself will need to come home to turn it off. Maybe I should have used a timer? I will check in at lunch to see if you or anyone else has a responce. The recipe looks wonderful and really easy! Hope that it is a keeper.
Also, can I freeze the meat after it is cooked? I know that the two of us won't be able to eat all of that, but planned to freeze for quick dinners.
The Smashed Potatoes will be wonderful, can't wait! Thanks so much!!

Susan, it should be ok if you leave it on until 6:00 since you have the crockpot on low. The accompanying article said that an hour or so should not make a difference.

There shouldn't be a problem freezing the leftovers either. I had a lot of extra merlot sauce, which I froze to use with other things. We really liked the smashed potatoes, the horseradish added an interesting flavor instead of making it too spicy.

Let me know how it turns out!

Enjoy!

Pardon me for being a buttinski but both items mentioned in your conversation sounded great and couldn't find them listed in a previous thread under the search function.

If either of you have time, could you direct me as to where I could find the merlot sauce and the Smashed Potatoes w/horseradish? Thanks.

I've actually made the potato dish but the addition of horseradish sounds very good.

shoyski,

The Merlot Pot Roast and Smashed Potato recipes are posted on the "a crock link" thread. They are from Sunset magazine. Our Supper Club made the pot roast at our October Dinner and it was outstanding!

Wendy W-thanks, I got home at 5 and the pot roast was not falling apart, it was the best! My husband came home at lunch to turn it and wanted to start eating it right away!! This recipe is definitely a keeper!! Thanks again! (Oh, I froze two containers of it for the next two weeks-no cooking dinners!)

Susan, I'm glad that you liked it. I want to try some of the other recipes in the section as they sound interesting and a bit more sophisticated than your usual run-of-the-mill crockpot recipes.

Peggy, I'm glad that you are fond of this as well - as you are one of our "review goddesses". http://www.cookinglight.com/bbs/smile.gif

Take care!

Wendy
