I can't possibly be the first one to get the new CL - that never happens !!

The cover is "Great Beef Stew" and there is a "warmining winter menu" which is based on beef stew.

There is a story and recipe section of cooking with soy sauce, a section of cooking old fashioned breads (including some meat-filled breads - hmmmm....).

Cooking class section is about cookbook author Mark Bittman. Reader recipes features "Lemon Chicken and Rice with Artichokes" among others, Lighten up is "Cajun Shrimp and Catfish," Inspired Vegetarian is an "Appalachian menu," Dinner Tonight is "Red bell pepper frittata," "southern shrimp and grits," "Huevos rancheros with Queso fresca" or "Joe's special(which appears to be a scrambled egg dish)."
Finally, superfast includes "crab cakes with remoulade," "chicken and barley stew," "pork chops with country gravy and mashed potatoes" and "garlic rosemary lamb pita."

They also added a new section called "Fithouse - smart ideas for living well"

Overall, nothing jumped out at me - hopefully once I dig in a bit more I will find something inspiring.

So let's see how long it takes to get to South FLA:(

October arrived damaged, November was really late, and December never came...so they've added a few months to my subscription...big deal:mad:

I want my mags on time!

I will have to live vicariously through all of you 'cause I know mine is not going to get here anytime soon. I only just received December on December 18. Rather than send then on the next available ship to Hawaii I think they save and send them via rowboat. Either that, or my magazine is the most read magazine on route to Hawaii. It does sound great so I will look forward to eentually receiving it.

I am with you there! OK, I know I live a lot further away, but give me a break. I also know that there is no way they will send it via air but ships arrive here at least 5 times a week (possible more). So why can't my magazine arrive 7-10 weeks later than the mainland? To be fair it is not just this magazine. I also subscribe to LHJ and for the past two months I haven't seen it. However another magazine I subscribe to faithfully arrives in record time, and it is not airflown.

Could you please post the recipe for "pork chops with country gravy and mashed potatoes".

I was wondering when the first post would be for the issue. I was at Barnes and Noble the other day and it wasn't on the newstand. Hope my issue arrives soon though. Thanks for the info Rottlover!

I'm so bummed....I just typed out the recipe for the pork chops, hit submit and got a "fatal error" and the post didn't take. Bummer. Its late and I need to go to bed, so I will try again tomorrow.....

That is a bummer, Rottlover. I've had that happen to me too. Until I figured out how to avoid it ......next time you get the "fatal error" thing, instead of hitting the back button, hit your refresh button. It will resend the information and it won't be lost. But we all appreciate the effort everyone makes to type recipes and find information for all of us, so your time and kindness is very much appreciated.

Thanks for the tip - lets hope I don't have to encounter that problem again !!!

Here's the pork chops recipe -

PORK CHOPS WITH COUNTRY GRAVY AND MASHED POTATOES

Refrigerated mashed potatoes are widely available and are already seasoned, so no additional salt is needed. The five-ingredient gravy would go well over pan-sauteed or oven-fried chicken. It's also great over an open-faced turkey sandwich.

3/4 tsp salt, divided
4 (4-oz) boneless center-cut loin pork chops (about 1 inch thick)
1 tsp butter
1 1/3 cups 1% lowfat milk
3 Tbsp all-purpose flour
1/4 tsp poultry seasoning
1/4 tsp black pepper
1 (20-oz) package refrigerated mashed potatoes (such as Simply Potatoes)

1. Heat a large nonstick skillet over medium-high heat. Sprinkle 1/4 tsp salt evenly over both sides of pork. Add 1 tsp butter to pan, stirring until butter is melted. Add the pork to pan, and cook polk for 3 minutes on each side. Remove pork from pan, and keep warm.

2. Combine low-fat milk and flour, stirring with a whisk. Add the milk mixture to pan, stirring with a whisk. Stir in remaining 1/2 tsp salt, poultry seasoning, and black pepper. Return pork to pan. Cover; reduce heat, and simmer for 7 minutes or until gravy is thick and pork is done.

3. While pork cooks, prepare potatoes according to package directions. Serve with pork. Yield: 4 servings (serving size: 1 pork chop, 2/3 cup potatoes, and 1/4 cup gravy).

Good luck and let us know how it turns out - I'm not one for pork, but the gravy does sound good. :)

Weird....it DID happen again and I did as Grace suggested and although the post showed up, it didn't bump the thread or indicate that I added to the thread. When I clicked on it, it was there though and that's all that really matters !!

Not sure whether I should submit a new post or not, but I made the "cover story" beef stew tonight. It was DELICIOUS !! DH loved it. I cooked it a bit longer than suggested (I made the "Quick Buttermilk Cornbread" from the same issue along with the chocolate souffles with creme anglais from Dec CL's cover and they took a bit longer than projected).

I also added approx 2 tbsp cornstarch mixed with just enough water to form a paste and added it about 1/2 hour before serving. The base was a little too thin for our tastes prior to the addition of the cornstarch. Finally, I added a Shiraz rather than the Cabernet the recipe suggests.

I served it over mashed potatoes as the recipe suggests and it was devine. DH was even forgiving of the fact we ate about 2 1/2 hours later than usual.

As a side note - the "quick buttermilk cornbread" was also a definite keeper that I would make again. I loved it (granted I did slather it with butter as I ate [New Year's hasn't arrived yet ;) ]).

I'm sure someone has already reviewed the souffles, so I shall renew that thread to talk about the yummy factor there !!!

Overall....a night of extensive cooking well worth it !!! :D :D

Grace - this sounds like the perfect day to me. I even have the rain to round it off. What I don't have is my CL but I am going to do something a little crazy - I am going out to put a clean towel in my letterbox incase it arrives. With all this rain the last thing I need is for it to arrive and the mailman puts it in a wet letterbox. I think I would cry. Enjoy your day!

I'm with you Grace. I have caught this *stupid* cold again  and had the opportunity to read THREE cooking magazines all in one day: latest CL, Cooks Illustrated and Everyday Food. I've already made my meus for the next week and a half!!!

Is it worth it as a double issue, folks?

I got my issue too but have not really had a chance to look through it too much yet! I hope that it is a keeper with lots of great recipes!

Grace
01-03-2004, 02:24 PM
Oh this issue looks REALLY good to me!! I was just telling my DH that I think I'd like to make probably 75% of the recipes in this one, as opposed to my usual 20% or so. Good thing too, since it's a combined issue! When oh when will they quit doing that - or at least quit doing it in the dead of winter when most people stay home and cook??  Why not combine November and December? Or July and August or something like that.

I agree. :D Those months would be the best to combine. Thanksgiving rolls into Christmas "before you know it" and I just don't get the chance to look at all the recipes.

I finally got mine yesterday....along with 2 others I've been waiting for.....

I've only looked through the recipe list in the back, some sound pretty good. Meg, I missed the zwieback, I'll have to check it out. DH's grandmother has made them for a long time too. I've made her recipe once, the little tops kept rolling off! :D

Susan- I commend you for attempting it! I haven't tried --yet--, but I think this recipe is detailed enough, that I shouldn't get to off track. But, I've never made yeast bread, either. Well, I did make pizza dough once, and it never rose!
