View Full Version : Review: Half-the-Fat Carrot Cake with Cream Cheese Frosting

The Seattle area Supper Club got together earlier this week and I contributed the Carrot cake. I thought the recipe was pretty easy although I had a little trouble finding coconut extract (had to go to 2 different stores). I thought the Cream Cheese frosting was very tasty. It came out not as smooth as I would have liked and the recipe warns not to overbeat so I didn't beat it as long as I would have liked. Overall the flavor and texture of the cake and frosting were excellent.

Thanks for posting the review. I am anxious to try it, and hadn't heard anyone mention it in any reviews. I'll definitely give it a try now.

I also made this cake this weekend and thought it was great. Even my husband, who doesn't care much for carrot cake enjoyed it.
Of course, I failed to read the directions properly the first time and softened the cream cheese instead of leaving it chilled. May I just say that it turned out to be a huge mistake and I had to make another trip to the grocery store. http://www.cookinglight.com/bbs/eek.gif

Thanks for the review! Carrot cake is one of our favorites. Do you think it would freeze well? With just my husband and myself in the household, I like to freeze part of a whole cake. Otherwise, it is just too tempting to munch down :-}
