View Full Version : Does anyone have the Superfast cookbook?

I borrowed this from the library and was curious if anyone had it. Looks like it was published in 2003 by Oxmoor House. Are the recipes the same ones as in the magazine or are they different?
Any recommendations from this book?

I have it and really like it. There are quite a few people on the board that own it (Val and Susan [swquilts] come to mind right away).
Some of the recipes that have received good reviews are the Slow Cooker Lasagna, and the Deep Dish Taco Pizza (or something like that).
You might want to do a search on "Superfast" to find the threads. I know there've been lots more recipe reviews that the two listed above.

I have it and have made several things from it. The recipes seem to all be new and different than the ones in the magazine.

Yup, I have it and I really like it!
This is what I've made: (from memory..:D )
Chipotle Black Bean Chili (I subbed 2 can kidney beans)
Chili Pie
Chicken Enchilada casserole (both of these using the above chili)
Deep Dish Taco Pizza
Spicy Pork au Jus
Slow Cook Lasagna
Picante Salad (added chicken)
The Calzone recipe (added more veggies)
That's about all I can remember right now....all of these have been really good and/or repeats. I just made another batch of chili over last weekend.
I remembered a couple more: Maple Glazed Salmon and Chicken Portobello.

Oh, great, just what I need, another cookbook I "have" to buy. :D I've been eyeing this one for awhile and now it looks like I will have to get it based on your recommendations.
Question: I have not yet done a lasagna in the slow cooker. How does it work? Does it all become one big soup or does it saty sort of layered like raditional lasagna? I just cannot seem to get a visual handle on this!

I made the lasagna and it turns out just like a regular lasagna.

Just use a deep spatula or a ladle to get it out. That way it stays in layers. I made this for New Years Eve and it was GONE in a heartbeat!

The lasagna was great! One word of advice, don't put ANY ricotta cheese on the top layer, or it turns into a rubber-like mass!
