We are going to read about George Washington Carver next month, then Id like to make peanut butter...any ideas of how? I made it in prek...but dont remember if there is a recipe, or exactally how to make it.

Hi Kim!

I got this recipe from Emeril's page on FoodTV.com after seeing him make it on his show quite a few months ago. Sorry to say I haven't tried it yet, though! (I can't bear to give up regular old Jif!) Nor do I remember how much this makes.

PEANUT BUTTER

4 cups unsalted peanuts
1/2 cup vegetable oil
1 teaspoon salt
1/4 cup granulated sugar

Preheat the oven to 350.
Place the peanuts on a baking sheet and place in the oven. Cook until the peanuts are toasted, about 6-8 minutes. (Shake the pan a couple of times, for overall browning.)
Remove the pan from the oven & place the peanuts in a food processor while they are still warm.
Add the oil, salt, and sugar.
Process until smooth.

Here's a recipe I found for you... I think it's the "natural" type peanut butter, so the kids may think it tastes "weird." http://www.cookinglight.com/bbs/smile.gif

Food Processor Peanut Butter

2 cups roasted shelled peanuts
1 tablespoon peanut oil
1/2 teaspoon salt (omit if salted peanuts are used)

Using the metal blade, process ingredients continuously for 2 to 3 minutes. The ground peanuts will form a ball which will slowly disappear. Continue to process until the desired consistency is obtained. If necessary, stop machine and scrape sides of container with a rubber spatula.

For crunchy peanut butter, stir in 1/2 cup chopped roasted peanuts after the processing is completed.

Yields 1 cup creamy or 1-1/2 cups crunchy peanut butter.

Store in a tightly closed container in the refrigerator. Oil may rise to the top. If this occurs, stir before using.
