Hello,

I'got tapioca, but I don't know how to make tapioca pudding!
Could anyone share a recepie, please?

Here is one.....I haven't tried it yet - let me know what you think if you do...

Tofu-Tapioca Pudding

SOURCE: Cooking Light YEAR: Sept 1998 PAGE: 169

INGREDIENTS FOR 8 SERVINGS:
3-1/4 cups fat-free milk, divided
3/4 cup sugar
1/4 cup uncooked quick-cooking tapioca
1/4 teaspoon salt
2 large eggs, lightly beaten
1 cup soft silken tofu, drained (about 6 ounces)
1-1/2 teaspoons vanilla extract

INSTRUCTIONS:
1. Combine 3 cups milk, sugar, tapioca, salt, and eggs in a medium saucepan,
stirring with a whisk; let stand 5 minutes. Bring to a boil over medium heat,
stirring constantly. Cook 30 seconds, stirring constantly. Pour into a bowl;
cool 15 minutes. Combine 1/4 cup milk, tofu, and vanilla in a food processor;
process 1 minute or until creamy. Fold tofu mixture into tapioca mixture.
Cover and chill (mixture continues to thicken as it chills). Yield: 8 servings
(serving size: 1/2 cup).

Thanks Grace for the tapioca recipe w/tofu. I am always looking for new ways to incorporate tofu into my diet, especially for recipes where you can not tast the tofu. I don't know if I will ever acquire a taste for it.

You know, I was just looking at this recipe, and I think I've avoided trying it because of the tofu (I don't think I'll ever acquire a taste for it either!). But I would imagine you could leave the tofu out, since tapioca is a thickener, and the eggs and milk are how you make custard, and I don't believe that the tofu would be the key ingredient in making it thick. I may try this and leave the tofu out......just an idea!

I did a search of the bulletin board for Tapioca Pudding, since I wasn't interested in the recipe from Cooking Light with tofu.

Grace - did you ever make this, and did you use the tofu? If so, how did it turn out?

isn't the receipe for tapioca pudding on the box? it used to be.
