View Full Version : Penne w/Green Beans, Sun-Dried Tomatoes...

Has anyone tried this from Sept. 2000? I made it last night & had mixed feelings. The taste was good as I love fresh green beans, sun-dried tomatoes & fresh Parmesan cheese. The texture, however, left something to be desired. There wasn't much of a "sauce" to it. There seemed to be just enough liquid to cook with but it was all soaked up, leaving the pasta fairly dry. Any suggestions? I'd like to hear other reviews to see what could be done differently next time. I'm sure I'll make it again some time but maybe with modifications, perhaps more olive oil? Thanks in advance for your help!

I would not make this one again. I found it very dry also. It needs more spices and herbs maybe.

Andrea, I also thought it was dry, but I had soaked my sun dried tomatoes in water and kept the liquid, which someone on this board had suggested. I then used the liquid to make more of the sauce. It was very good. My husband really liked it. Try that next time.LaurieC

I had tried this dish, too. It didn't seem like anything too spectacular. I love to mix veggies and pasta with olive oil all the time. It didn't seem too much different than any other mix I've come up with. It wasn't bad or awful, just not spectacular or different. I think I probably added a splash of wine when I made it and most likely a little extra olive oil.

I made this the other night and my husband really liked it (gave it an 8) but I thought it was just so-so. However, I didn't think it was too dry just too salty. Also, I didn't notice that the recipe said to cut the sundried tomatoes and as we were eating it I said "gee, this would be so much better if the sun-dried tomatoes were sliced." Then when I was writing the recipe down for a friend who wanted it I noticed that i had missed that. http://www.cookinglight.com/bbs/redface.gif Anyway, I would definitely make this again, but I would add less salt next time.

It's been awhile since I made this but I remember not being overly impressed. Reasonings along the lines as most people have stated. I do recall thinking I'd make it again if I had more green beans than I knew what to do with. I think it got a 2/5 starts on our scale (where if we don't like it it doesn't even get rated).

I made this tonight and actually really liked it. I didn't have any capers, so I just omitted them and ended up making homemade gnocchi (out of the freezer) instead of the penne. I also doubled the sundried tomatoes, which made a lot of texture, if not sauce. It didn't bother me or my husband, who usually likes LOTS of sauce. It was good just the way I made it because there were so many diced up tomatoes. If you haven't tried this and want a fast dinner, give it a shot. http://www.cookinglight.com/bbs/wink.gif
i tried this a few months ago, and we weren't impressed at all. it wasn't BAD, it just wasn't worth the time to prepare it. we are happier making pasta and just tossing in some sun-dried tomatoes or other veggies and any kind of sauce.
