I want to try the lasagne from The Italian-American Cookbook and hte Galina's Meat Sauce calls for chopped beef chuck. What does this mean. Do I buy beef chuck (is this the same as stew meat?) and chop it or chop it in the food processor (I have seen this on cooking shows).

Has anyone tried this recipe?

I'm not really familiar with the term but I would do a coarse grind (which I guess is what you'd get with the FP) and yes a chuck steak or roast is what you'd want to buy. Stew meat is not from one particular cut (unless it's labeled as such) it's just the bits and pieces from other cuts so some will be more tender than others.

I happen to have this book. The cooking instructions indicate to add the meat, breaking up the chunks, which you wouldn't be doing if the meat were simply chopped up. I think a coarsely chopped or ground beef is all that's meant-- frankly, I wouldn't even worry if it weren't chuck.
