View Full Version : Black Bean Lasagna with Arrabbiata sauce

I just created my very first recipe.

I wanted to make something quick and tasty using black beans. In the past I have found that some recipes using beans are a little bland so I wanted to make something with a little kick to it so I used President's Choice Arrabbiata sauce which is quite spicy and very delicious in itself.

It really turned out to be delicious and easy. I used no-boil lasagna noodles.

BLACK BEAN LASAGNA WITH ARRABBIATA SAUCE

1 can black beans, canned -- drained and rinsed
2 jars Arrabbiata spaghetti sauce
1/2 tablespoon garlic puree
2 cups part-skim-milk ricotta
1 large egg -- beaten lightly
1 cup freshly grated Parmesan
5 ounces dried lasagna noodles -- (6 noodles), or use no-boil noodles
14 ounces part-skim-milk mozzarella -- sliced thin

Mash the beans with a potato masher.

In a bowl combine the ricotta, the egg, the garlic and 1/2 cup of the Parmesan.

In a kettle of boiling salted water cook the noodles for 8 to 10 minutes, or until they are al dente, drain them in a colander, and rinse them under cold water.

In a 13 by 9 inches, spoon a little of the spaghetti sauce and arrange 3 of the noodles and over it pour the rest of the first jar of spaghetti sauce. Spread the beans and then half the ricotta mixture. Arrange half of the mozzarella over the beans and sprinkle with one half of the remaining Parmesan. Layer 3 more noodles over the Parmesan, spread the other jar of sauce over the noodles, and top the sauce with the other half of the mozzarella and the remaining Parmesan.

Bake the lasagna in the middle of a preheated 375°F. oven for 30 to 35 minutes, or until it is bubbling.

Let stand 10 minutes before serving.

Ok dumb question.... what is Arrabbiata sauce?!!

Daniele,

Thanks for sharing your creation! :) Sounds original and hearty. How spicy did it turn out, in your opinion? Most dishes I've had with arrabiata sauce have been quite spicy for my tastes, but I've never tried the PC arrabiata sauce.

It is a spicy Italian tomato sauce made with hot peppers.

Natasha, it had a nice kick to it but not to the point of burning out the mouth. I think the other ingredients mellow it out a bit but there is some appreciable heat to it.

Thanks, Daniele. Maybe I'll try it with a bit less of that sauce, and some regular sauce to make up the rest of the 2 jars. :)

I know - I can be such a wuss!! :D

I hope you like it. If you use regular sauce, I think you would have to add a little extra seasoning of some kind otherwise it might be a little bland.

I used no-boil noodles and 2 jars (660 ml each) was the perfect amount of sauce. You might be able to use less if you use regular dry lasagna noodles.

brava daniele! you go girl! the name of the recipe caught my eye right away, i thought, what a clever combination :) i am a flexitarian who mainly cooks meat for SO, and this would work perfectly for me/us. thank you much.
