I just received my Jan issue of Cooking Light (yup, I began subscribing). Any particular recipes that I should have a look at?

I gotta tell you that January is not knocking my socks off.
:(

However, the Sweet Black Pepper Fish review here (http://community.cookinglight.com/showthread.php?s=&threadid=52215&highlight=sweet+black+pepper+fish) got a "9.5" from me and DH, and we're looking forward to the Pork Tenderloin with Xec from the same article...

My DH and I really liked the beef stew on the cover. I usually make more "exotic" recipies from CL, or things that I haven't made before, but this recipe made a great comfort food meal. I will definitely make it again, particularly when we have company and want to make a hearty, simple meal.

If you haven't had a chance to read them yet, there are several good threads over the last few weeks that have discussed the hits and misses of January.

I was a bit disappointed with the January issue. I am going to try the Shrimp in Green Sauce.

I've only tried one recipe so far: Braised Kale with Bacon and Cider. We liked it, but you would have to be a fan of kale to enjoy the dish. I'd also like to try the Sweet Pepper Fish and maybe some of the vegetarian pizzas. Haven't found much else to inspire me, but that's fine since I'm thoroughly enjoying my back issues of Cooking Light right now. :)

I was disappointed in that recipe. There are a couple of threads with reviews on it...you might want to search first before going ahead.

Quick Buttermilk Cornbread
Pecan Bar Cookies (just okay)
Unfried Apple Pies
Breakfast Polenta with Warm Berry Compote
Beef Stew
Creamy Mashed Potatoes
Asian Chicken over Noodles (just okay)
Corn Chow-ChoWinter Greens and Potato Casserole

They were pretty darn good at first, then upon sitting overnight they got very hard and dry.

The Oatmeal-Walnut Cookies were good. Tasted even better after sitting around for a while.

We loved the shrimp in green sauce, although I did add more garlic than called for, and sauted them rather than baked them.

And those Unfried Apple Pies. Yum! I will definitely be making those again.

Miller's Cinnamon Raisin Bread is delicious! One of our Supper Club members made it and she warned me about the extreme stickiness of the dough, but I did it in my Kitchen Aid and it was fine. I decreased the butter to 1-1/2 tablespoons, used Egg Beaters, and subbed 1/2 cup chopped walnuts for the raisins (we don't like raisins...). It produced a nice, high loaf and smelled so good while it baked. It tastes delicious, and I plan on using it for French toast tomorrow.

Another Supper Club member raved about the breakfast polenta so much that I put instant dry polenta on my grocery list. Same for the Irish Oatmeal bread-- had to put steel-cut oats on the list too (she said that it made the best toast!).

But I really haven't found much else that I want to try. Hoping for more inspiration next month...

I made the Pineapple-Coconut Banana Upside-Down Cake. We thought it was very good (although I had to scrape the coconut off for my young sons). I reduced the brown sugar from 3/4 c. to 1/4 c. since we like our desserts on the less-sweet side.

I also tried the Spiced Turkey Cutlets. We rated it not bad, but not a repeater. It was fine the first night, but didn't do very well as leftovers, in our opinion.

I still want to try the Shrimp in Green Sauce, the Hoppin' John, and several of the breads -- especially Miller's Cinnamon Raisin Bread and the Irish Oatmeal Bread.

on page 136. It was ok, I'm not a big fan of cinnamon, and my husband didn't care for the cinnamon either. What do you suggest that I use as a substitute for the cinnamon? Otherwise we like the recipe, it has a little "bite" to it with the red pepper....my problem with this issue was what to try first...so many looked so good!

Loved, loved, loved the Asian BBQ beef. Served it over brown rice, as I wasn't in a sandwhich mood.

Loved, loved, loved the upside down pineapple cake. So easy and yummy.

I also liked the Oatmeal Walnut Cookies. I am new to the board and am always looking for a good Oatmeal Cookie recipe (preferably light). :) They were a nice texture. Chewy, which is how I like them. They could have been a bit crispier on the outside and they were kind of "moundish" like in the picture. I like my cookies to be just a bit flatter, but still I really liked them. This site is so cool!:cool: Just before I read this I was browsing through old thread and found the Oatmeal Cookie challenge. I am excited to try some of the recipes I found there to aid me in my quest for the perfect oatmeat cookie. :p

My husband loved the barbecue beef sandwiches. I liked them too, but thought the flavor was a little too strong, but that might be because i put in a whole can of beef broth ( a couple of extra ounces) and extra hoisin sauce (just to finish the jar off, probably put in double what was called for).

I thought the sloppy joes were a little too mustardy, but they tasted better as leftovers.

This was simple to throw together and delicious! Great for a cold winter's day! I boiled my chicken breasts for 20 minutes in water that I had flavored with pepper corns, garlic, salt, and Italian herbs. Leftover roasted chicken or turkey would work well in this recipe too. My children all loved it as did I! I ended up with more servings than the recipe said so I must have added more of something (probably the chicken and veggies)! I've been serving the leftovers to my 10 month old son who could eat it every meal it seems. I will probably make this again this week since it was such a hit and I have all the ingredients on hand.

I made the Savory Yogurt Cheesecake with Carmelized Onions for our dinner group on Saturday. Everyone enjoyed this and the leftovers were good on Sunday too! One thing though, I didn't feel that the crust added much. I wonder if you could follow the recipe, elimating the crust.

Welcome to Cooking Light! It usually is a great magazine. Give it a chance. I agree with the others, January 2004 was not very inspiring!

I Loved the Unfried Apple Pies! Made them yesterday and they are gone already, and only 2 people live here. Oink! I really haven't made much out of this issue yet, but this is definitely the best so far. I'm already thinking of making another batch..... :D

Two recipes that we have really enjoyed have been the Southern Shrimp and Grits and the Braised Kale with Bacon and Cider.

Actually, this issue is the most tempting I've seen in a LONG time. I want to make everything in the "Red Cooking" article (we had -- sort of -- the Barbecued "Beef" last night... I used plain purchased seitan instead... it was very, very good!); the entire breakfast article looks delicious (especially the Shrimp and Grits!); the bread article is full of possibility (the Babka, maybe, this weekend, and definitely the Cinnamon Bread); and -- and -- and -- yeah! It's been a long time since I saw more'n one or two things I really wanted to make in a CL, and even longer since at least one of those things wasn't some kind of dessert!

None have totally wowed me, but the winter greens casserole, the upside down cake and the chicken with olives were all very good.

I have tried to find reviews for two recipes, I might have accidently skipped over them. Has anyone tried the Pork and Plantains on page 146? or Joe's Special on 184. Both of these have caught my eye. I think the pictures of each of the recipes look very delicious:) Thanks

I am still waiting for the January issue. November's issue was the last one I received. Think I'll have to email those nice people at CL again. Thanks for giving me a taste of what the magazine has in store for me.

Today I'm home with a sick granddaughter, so thought I'd do some cooking. I'd purchased the ingredients for the Bierocks, so thought I'd make those. I decided to use the bread machine for the bread dough (I know, I know.. I'm lazy...lol). Well guess who wasn't paying attention and hit the wrong button.... LOL... WONDERFUL HOT BREAD AND BUTTER instead of Bierocks. Oh well.... I'll try again another time.

Hi Connie,

Funny about making a loaf of bread instead of bierocks. That is something that I would do and not even notice until I started to smell the bread baking. :)

If you do make the bierocks again, I would love to know how they turn out. The recipe totally reminds me of something that my ex's Grandma used to make. She was German-Russian and it was one of her many specialties. I haven't had a chance to look online at where bierocks come from, but if they are the same as what she used to make, they are SOOOOOOOOOO good!!

Oh even worse.... I didn't even smell the bread baking... imaging my surprise when I opened the lid of the bread machine.

Anyway... I did go ahead and try them again.... they're very good (I added garlic to the recipe). We ate them right out of the oven but I'm thinking they'd taste better cold. Also, I think more filling as they were a bit bready... so next time I'll double the filling. Worthy maknig again!

Chicken with Olives was the first thing I made from this issue and it was really great. I loved the combination of flavors and it was really easy to assemble. I served it over couscous and it looked just like the picture. I served it for a friend I hadn't seen since high school and I was so proud of how it looked.

The perfect combination - easy to make and presentable for company.

Count me in with those who found this issue more inspiring than last falls issues.

Loved the Mediterranenan Beef Stew. It's a thinner sauce but very good. Used grass-fed beef from Whole Foods which was very tender. I'm not sure if it was the recipe or the meat. As good as it was, maybe an 8, the leftovers were fantastic.

Cranberry Apple Crumble: Very good, not too sweet with a nice balance between the sweet of brownsugar and the tarness of the cranberry. My grandmother who could probably live on sugar loved it.

Chicken Brasied with Walnut Sauce: Unspectacular and bland. Could be that I didn't have ground red pepper and tried adding some ground red pepper flakes of the type some would put on a pizza. Maybe they were old. The texture was interesting though. If I made it again, I'd add a good amount of rosemary.

MAREESYDNEY: After waiting two weeks to hear back from the online help people, I called the CL customer service line and got help right away. You might want to try them about your subscription instead of the online people.

I made the yogurt cheese for this recipe but had to buy a springform pan and all that was available was a 9" pan. I've cooked many cheesecakes, so I'm pretty comfortable with cooking it by instinct, however, I was wondering if it would be too thin? Also, glad to hear that about the crust. Didn't sound appealing. How do you think it would do without the crust on the bottom.

Want to try chicken with green olives. Looks great. Has anyone tried it yet?

We had a lot of these at my supper club meeting this past month. I LOVED the beef stew on the cover. The cranberry-apple crumble was very good. I'm more of an apple crisp kind of gal, but this was very good. If I were to have this again I might try to make the topping more crispy. I agree with someone else that said it was the perfect mix of tart and sweet. The Broccoli, Orange and Watercress Saladwas excellent! I couldn't get enough of it. I, actually, just made this again and had it for lunch today! Yummy! The Mexican-Corn and Bean soup was very good as well. It was so quick and easy to make. It had quite a kick to it and was perfect with cornbread muffins.
