Hi ladies
Since this is now clearly our favorite dish (we've had it three times in the past two weeks!!!:eek: ) I really need the calories, fat and fiber per serving. Frankly, I'm dreading it, but I think it's time to face facts and look them squarely in the eye! :p
Can anyone run the numbers for me? Thank you so much!!!
Crockpot Thai Chicken

1-2 lb chicken pieces (e.g. breasts or thighs)
3/4 cup salsa
1/4 cup peanut butter (I use "reduced fat")
2-4 Tbs lime juice
1-2 Tbs soy sauce
1 Tbs fresh minced or jarred ginger
1 tsp "fresh ground chili paste"
2-3 Tbs fish sauce
GARNISH:
1/4 cup raw peanuts
2-4 Tbs fresh cilantro, chopped
Place chicken in crockpot. Mix other ingredients except cilantro and peanuts. Pour over chicken. Cook for 6-8 hours on low for chicken with bones in or 4 hours on low for chicken without bones. Garnish with cilantro and peanuts and serve.

Sorry I don't have nutritional info, but it doesn't look that bad... :) in fact, i think i'm going to try and make it for dinner one day this week. can you tell me, what is "fresh ground chilli paste"? also, you think i can get away with leaving the fish sauce out?

I can't calcuate the nutritional info for you as I don't have MC, but you may want to join FitDay (http://www.fitday.com/). This enables you to input the ingredients online and get the break down on all the info you need. You just need to get out a calculator to break it down into serving size as it just gives the data as a whole.
Looking at the recipe, I'd have to agree with Carpathia, it doesn't look bad at all. Really, the fat is only coming from the chicken, which is low as we know, and the peanut butter. I don't know how many this serves, but even at 4 servings, that's then only 1 tbsp of peanut butter per serving.

Carpathia - Actually, Claire's original recipe doesn't have chiles nor fish sauce in it, but it's sooooooooooo good with them added in...
Anyway I use either "Fresh Ground Chile Paste" (from the asian section at the grocery store) plus a dash of sugar or honey and a dash of white wine vinegar, or best of all, some "Sweet Red Chili Sauce" buy online here (http://www.atasteofthai.com/sauces.cfm) if I have some on hand.

I had to alter some of the ingredients as mastercook wouldn't recognize stuff the way you copied it...I'm not great with Mastercook either...oh, and I used 4 servings...and 1 pound of chicken pieces. HEre's what I got:

Maybe someone with better Mastercook skills will prove me wrong...
I don't know if you left the skins on and maybe mastercook thinks they are on...
if it's mostly PB, it's the good fat :D

If you use boneless, skinless breasts, that would lower the fat count. Mastercook isn't always right, I would try the fitday calculator.

That's more like it!
If you use boneless skinless breasts, the only fat would come from whatever paltry amount is in the chicken 2 or 3 grams? and the tablespoon of low fat peanut butter (6 grams?) which is how much you'd get in a quarter of the dish.
I wouldn't eat it if it had 21 grams per serving! The calorie count would be lower too.

I'll make this in the next day or so....oh, and can I use frozen chicken or thaw first...I know..it's probably been asked before...
I'll just thaw it and be done with it.

Here's my non-MC analysis.
1 lb chicken pieces -- (1 to 2) boneless, skinless 480
3/4 cup salsa 60-80
1/4 cup peanut butter 360
2 Tbs lime juice -- (2 to 4) 10
1 Tb soy sauce -- (1 to 2) 10
1 Tb ginger root, grated 10
1 " fresh ground chili paste" Uh, no idea. 60ish?
2 Tbs fish sauce -- (2 to 3) 30? Fish sauce isn't high cal
GARNISH:
1/4 cup raw peanuts
2 Tbs fresh cilantro -- chopped (2 to 4)
1040 for the whole dish divided by 4 = 260
So around 260 without the garnish.

I've done it both ways. For this dish, I prefer the boneless, skinless breasts.
I usually thaw mine first because I always forget how long frozen chicken takes, but I think (if you forget to thaw it or something!) you'd be fine just throwing it in frozen and adding on an hour or so.

My guess is 8-10 grams of fat. No idea on the fiber. Probably not much, though. You could serve it with brown rice :).
