Roasted Chick w/ Wild Rice Soup-Yum!

I just made this recipe (J/F 2001, pg 126) and it is great! I have a neighbor recovering from surgery and wanted to take her something hearty. She will love this if I can stop eating long enough to put some in a bowl and take it to her. Thanks Lynn McPherson of Hillsboro, OR. This is now one of my family's favorites.

I made this soup tonight and thought it was very good. I do have a confession to make. I found myself adding LOTS of pepper & salt!!! I know, that blows the idea of "low sodium" broth. I have used the low sodium before with good results. I just couldn't help myself. The soup was crying out for S & P!!!
