Homemade Fish Sticks?

Has anyone ever made fish sticks from scratch? My kids are on a kick where they want these almost every day, and I don't like to give them the frozen ones very often. I have made chicken fingers by dipping strips of chicken breast in flour, egg white, and bread crumbs -- do you think I could just do the fish the same way? Would you freeze them without cooking, or would you bake and then freeze? Any thoughts would be appreciated.

Yes, you can make them exactly like chicken fingers. I've done it before with great success. As for freezing, we'll have to hope someone else posts because I have no idea.
