I am getting the college roommates together next weekend for a few days of girl-time...I am looking some recipes for yummy post-slumber-party dishes. Key word: EASY. There will be too many things going on that weekend for lengthy prep work! Thanks!

I would go for the Farmer's Casserole. All is done the night before and stick it in the oven next morning, with some baking power biscuits and a fruit salad, it's a great, easy meal.

Any quiche especially if you use a store bought crust. I made the bacon and leek tart and it was yummy. I made it ahead then reheated it when it was time. No problems.

Both good ideas, thanks. I am a big quiche fan...does anyone have a REALLY great muffin recipe? Muffins might be good to do ahead as well.

go to the upper right hand corner and click on the search, then type in muffins. there was a thread awile back title, "give me your muffins", you'll find a ton of recipes there.

I agree with Sneezles, try the Farmer's Casserole. I haven't tried it yet but it looks easy and very good. There is also a spinach quiche that everyone is raving about.

We're having a group of friends in town next weekend as well, and I'll be making Farmer's Casserole. It's easy and delicious!!

Lemony Raspberry or Blueberry Crumb Muffins

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 c. flour
1/2 c. sugar
2 t. baking powder
1/2 t. baking soda
1/2 t. salt
1 carton lemon yogurt (can use light) -- (8 oz.)
1/2 c. oil
1 t. grated lemon zest
2 eggs
1 to 1 1/2 cups raspberries or blueberries (frozen or fresh)
Topping:
1/3 c. sugar
1/4 c. flour
2 T. butter

In large bowl, combine flour and all dry ingredients (except topping ingredients).

In a small bowl combine yogurt, oil, lemon peel, and eggs.

Add to dry ingredients; stir just until dry ingredients are moistened. Gently stir in raspberries or blueberries. (If they are frozen don't thaw).

Spray muffin pans with Pam and fill about 3/4 full.

Combine topping ingredients with pastry blender or fork until crumbly. Sprinkle topping over muffin batter.

Bake at 400 deg. for 18-20 minutes.


NOTES : If you don't like lemon, you could eliminate the lemon zest and substitute the lemon yogurt with plain yogurt or sour cream; however, I think the lemon yogurt and zest add great flavor.

I've even made these with chopped, fresh strawberries.

Banana Crumb Muffins

Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
1 1/2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/2 teaspoon salt
3 large very ripe bananas
3/4 cup sugar
1 egg -- lightly beaten
1/3 cup butter -- melted
Topping:
1/3 cup brown sugar
1 Tablespoon all-purpose flour
1/8 teaspoon cinnamon
1 Tablespoon butter

In a large bowl, combine dry ingredients.

Combine bananas, sugar, egg and butter; mix well. Stir into dry ingredients just until moistened.

Fill greased or paper-lined muffin cups 3/4 full.

Combine the first three topping ingredients; cut in butter until crumbly. Sprinkle over muffins.

Bake at 375 degrees (*see note)for 18-20 or until muffins test done. Don't over-bake! Cool in pan 10 minutes before removing to a wire rack.

*Note: I bake these at 325, but the original recipe states 375.

Mini Cinnamon Swirls

1 can refrigerated crescent rolls
2 Tablespoons butter -- softened
2 Tablespoons sugar
1 teaspoon cinnamon
Glaze:
1/2 cup powdered sugar
1 Tablespoon milk
1/4 teaspoon pure vanilla extract

Separate dough into 2 rectangles. Spread with butter ; sprinkle with mixture of sugar and cinnamon. Roll up from narrow end to enclose filling; press edges to seal.

Cut each roll into 6 slices. Place in muffin cups sprayed with nonstick cooking spray. Bake at 375 degrees for 10 to 15 minutes or until golden brown. Remove to wire rack.

For glaze, combine all ingredients in bowl and mix until smooth. Drizzle over warm rolls.

Orange Julius

1 banana -- optional
1 cup cold water
1 cup milk

1 teaspoon pure vanilla extract
12 ice cubes -- (12 to 14)

Blend first 6 ingredients in blender.

Add ice cubes 1 or 2 at a time through hole in top of lid while blending.

Serve immediately.

Strawberry Banana Smoothie

10 ounce box sweetened frozen strawberries
1 large banana -- optional
1 cup milk
1 cup cold water
1 t. pure vanilla extract
12 ice cubes -- (12 to 14)

Put the strawberries in the microwave for 25-30 seconds to thaw slightly.

Blend first 5 ingredients in a blender.

Add ice cubes 1 or 2 at a time through top of lid while blending.

Serve immediately.

May I suggest another good dish that you put together the night before and bake in the morning.....French Toast Casserole. I think you could find it on recipe search at the CL website.

this is a perfect make the day before breakfast


OVERNIGHT CARAMEL FRENCH TOAST
1 loaf French bread
1 stick butter
1 cup brown sugar
3 tablespoons Karo Syrup (corn syrup - it doesn't specify light or dark)
6 eggs
1 & 1/2 cups milk
1 tablespoon vanilla
cinnamon
fresh fruit
Melt butter, brown sugar, and Karo syrup over medium heat while stirring. Bring to boil and then pour into 9x11" casserole pan. Slice bread into 1" widths and lay over caramel mixture. Mix eggs and milk and vanilla and pour over bread. Sprinkle top with cinnamon and cover with plastic wrap. Refrigerate over night. Uncover and bake in 350-degree oven for 45 minutes. Serve with fresh fruit and syrup.

I second the French Toast Souffle, and will also add the Make ahead Cinnamon Rolls from Dec 1999. Both of these you make ahead the night before and bake in the morning. I will also suggest the Morning Glory Muffins, the Raspberry Crumb Cake, and the Hashbrown Potato Casserole.

Hi Kabs - I modified the following by using my breadmachine to make a 2-pound batch of dough (half whole wheat with gluten, half white) and doubled the other ingredients. I start the dough in the breadmachine in the evening. When it is almost done I put the melted brownsugar/honey and pecans in a big lightly greased cast iron skillet. I roll the dough out, sprinkle with sugar cinnamon and sometimes raisens, roll up, cut individual rolls. Place rolls in pan (on top of honey/pecan mix) so sides are touching each other or the side of the skillet. Cover the whole mess and put in the fridge overnight. Take out the next morning and let rise about an hour then bake. With a breadmachine to do the work the rest only takes about 5 minutes and the results are well worth it. I hope you have a great weekend with lots of quick/easy/wonderful food.

Honey-Pecan Cinnamon Rolls

1 (1-pound) loaf frozen white bread dough
2 tablespoons granulated sugar
2 teaspoons ground cinnamon
Butter-flavored cooking spray
1/3 cup honey
1/3 cup packed brown sugar
1/4 cup chopped pecans, toasted

1. Thaw dough in refrigerator 12 hours; cover and bring to room temperature (about 1 hour).

2. Combine granulated sugar and cinnamon. Roll dough into a 16 x 12-inch rectangle on a lightly floured surface; coat with cooking spray, and sprinkle with sugar mixture. Coat dough again with cooking spray. Roll dough tightly, starting with short end, pressing to eliminate air pockets; pinch seam and ends to seal. Cut dough crosswise into 12 (1-inch-thick) slices. Place honey in a small microwave-safe bowl; heat at high 20 seconds. Pour honey into a 9-inch round cake pan, tilting pan so honey covers bottom; sprinkle with brown sugar and pecans. Place rolls, cut sides down, in pan. Cover and let rise in a warm place (85°), free from drafts, 45 minutes or until doubled in size.

3. Preheat oven to 350°.

4. Bake at 350° for 20 minutes or until golden brown. Invert rolls immediately onto a platter; cool 5 minutes. Yield: 1
dozen. Serving size: 1 roll.

You will also need a beverage. I freeze peeled chunks of ripe banana and toss them in the blender with orange juice or pineapple juice to make fat-free smoothies. You also can add frozen strawberries.
For a richer smoothie, blend the banana with a little milk and peanut butter.
