Today was a throw it all together and see what comes out kind of dinner. Here's what I came up with, it was pretty tasty if I do say so myself. :D The name was inspired by a conversation with my roommate. When listing off possible soup ingredients, I said, "we have chicken and lentils." The response was "Chicken Little? Ack! The sky is falling!" Hence the decision to incorporate apple juice and the name of the soup. :) If you like a sweet-savory combo, then you might like this one.
For added effect, pour the apple juice in from high above the stove. Just watch for the splashback! I used 100% apple juice and McCormick Curry Powder for this recipe.
BTW - the apple-baked chicken was good on its own too! So cook extra. :D

The Sky is Falling Soup

1/4 pound chicken breast without skin
1/4 cup apple juice
1 clove garlic -- minced
1 teaspoon salt and pepper -- to taste
2 cups water or chicken broth
1/2 cup lentils, HEB brand
1/2 onion -- diced small
6 baby carrots -- chopped into thin rounds
1/3 cup apple juice -- to 1/2 cup - to taste
1/2 teaspoon chicken broth powder (if using water)
1 1/2 teaspoons curry powder -- to taste
1 teaspoon salt -- to taste
dash cayenne pepper -- to taste
1/2 teaspoon pepper -- to taste
dash ground ginger -- to taste
dash ground cloves -- to taste
Preheat oven to 350. Spray baking dish with Pam. Pound chicken flat and lay in baking dish. Pour 1/4 cup apple juice over, sprinkle with garlic, salt, and pepper.
Bake for 25 minutes or until done. When done, chop into 1/2 inch pieces and add to soup.
combine remaining ingredients in a pot and bring to a boil. Reduce heat to a simmer and cook 30-40 minutes or until lentils are deisred tenderness. Add chicken to soup when it comes out of the oven. Stir occasionally and taste before serving to adjust the seasonings and amount of apple juice for sweetness.
