iso: pistachio-pineapple pudding

This recipe was posted on CL online page along with chili for a crowd recipe. I can't find it through recipe finder. Do they just post for a week and then delete it?

Don't have that recipe but remeber a pudding that Weight Watchers had that was pistachio pudding with pineapple in it. Maybe someone has that...don't know where mine is!

Hi JulieAnn,
Here's a recipe I have for a "Pistachio Cream with Pineapple", and it uses pudding. I'm not sure this is what you're looking for, but it might do until the real one comes along.

1 4oz. package of pistachio instant pudding
1/3 c nonfat milk powder
3/4 c plain nonfat yogurt
1 c crushed pineapple, undrained
3/4 c Lite Cool Whip
1 medium banana, diced

Combine the pudding and milk powder in a bowl
Add the yogurt and pineapple.
Fold in the Cool Whip.
Fold in the banana.
Spoon into dessert cups and allow it to set up before serving.

If you'd like a little crunch, you can sprinkle some unsalted chopped pistachio nuts on top, or you can fold some into the mixture at the same time that you're folding in the bananas.

Melina, that sounds really similar to CL's. But I hadn't thought of putting bananas in it. Sounds good. To be really honest, I'm planning on serving this as the salad with tomorrow night's dinner. Pineapple, banana, yogurt---- that's all healthy isn't it? http://www.cookinglight.com/bbs/smile.gif

You betcha! Also, I've subbed vanilla pudding for the pistachio and changed the fruit to whatever I felt like having.
