There is one listed in the 2001 Annual for August. Hope it's the one you're looking for:
Chicken Scampi
1 pound skinned, boned chicken breast, cut into 1-inch-wide strips
1/4 cup egg substitute
1/3 cup Italian breadcrumbs
Cooking Spray
2 tbs butter or stick margarine
3 garlic cloves, minced
1 cup fat-free, less-sodium chicken broth
2/3 cup dry white wine
1 1/2 tbs chopped fresh or 1 1/2 tsp dried parsley
1 1/2 tsp salt-free seasoning (such as Mrs. Dash)
1/4 tsp dried oregano
1/8 tsp salt
3 cups hot cooked linguine (about 6 oz uncooked)
1/4 cup (1 oz) grated fresh parmesean cheese
1. Dip chicken in egg substitute, dredge in breadcrumbs.
2. Place a large nonstick skillet coated with cooking spray over medium-high heat until hot. Add chicken, and saute 6 mintues or until browned. Remove from pan.
3. Melt butter in pan over medium-high heat. Add garlic, and suate 1 minute. Add broth and next 5 ingredients, and bring to a boil. Add chicken, reduce heat, and simmer 20 minutes. Place 3/4 cup pasta on each of 4 plates, top each serving with 3/4 cup chicken mixture, and sprinkle with 1 tbs cheese.
