View Full Version : ISO: Beanless Taco Soup

My DH came home from work raving about the taco soup the caf. had that day at work. Usually he raves about how much my food is better than the caf. :p Deciding to make some for us I did a search and every recipe I came up with had beans. He hates beans and claims the one at work didn't have any. The only ingre. he gave me were cheese and he thinks crushed up tor. chips.
I hate just to leave them out since most of the recipes I came across it seemed like a major ingre. Anyone have a good taco soup that doesn't call for beans? TIA

You could kind of make your own.

Brown up a pound of ground beef or a steak cut up into small pieces. Add stock, canned tomatoes with green chiles, garlic, spices like cumin, oregano, s & p. Then right before serving, crunch up some tortilla chips. If he likes veggies you could add zucchini or corn also. Sprinkle some cheese on top too.
