View Full Version : Mocha Cherry Cookies - FABULOUS IMO

I made these cookies at Christmastime but didn't have time to post it for you-all. I personally think this is one of the best cookies I've ever eaten. The first time I made them, DH and I couldn't stop eating them. I then made two other batches, adding more cherries than called for because we thought they would be better. I was right.
Here it is. I've had friends try them that hate maraschino cherries or nuts or both love them. I process the nuts in a food processor into small pieces because I despise nuts!

This came from Country Christmas 1998 submitted by Diana Molbert of Saskatchewan.

1 c. butter, no substitutes
1/2 c. sugar

1 tsp. of vanilla extract
1 tsp. instant coffee granules
1 tsp. hot water

1/4 c. baking cocoa
2 c. all-purpose flour

1/2 c. chopped maraschino cherries
1/2 c. chopped walnuts

Additional sugar
melted semisweet chocolate, optional

In a mixing bowl, cream butter and sugar until fluffy. Add vanilla. Dissolve coffee granules in water; add to creamed mixture with cocoa. Add flour and mix well. Stir in cherries and walnuts. Shape into 1-1/4-in. balls; roll in sugar. Place on ungreased baking sheets. Bake at 325 for 20-22 min. Cool on wire racks. Drizzle with chocolate if desired. Yield: About 3 dozen.
(I did not add the melted choco. I thought they were good just rolled in a little bit of sugar)
I used a Kitchen Aid mixer to do the dirty work and put them on a PC bar pan to cook them. You can make the second set of balls and set them on a plate while the first batch cooks. They are easy to handle. (let's face it, 20 min. per batch is a long time but worth it.) I also let the cookies sit on the stone for about a min. before I took them off...

Has anyone tried these? They are so wonderful I actually dreamed about them at night (sick, huh?) With Valentine's Day coming up, you can roll them in red sugar...just don't overcook them...they'll turn to dust in your mouth or before it gets there!

Just curious... I read here that subbing some shortening for some butter will result in a cookie that doesn't spread so much. I've been having horrible luck with pancake cookies and thought I'd try that hint on my next batch, which turns out to be these. But I don't want to ruin them, either!
Won't somebody please enlighten me?

lisa, you can use margarine. I've made them both ways. Shortening melts differently than butter and margarine different than butter, but I thought they still tasted great either way...oh, i was easy on the sugar, too, when I rolled them...

make sure to add extra cherries!

hey, has anyone made these? I am dying to know if I am the only one who thinks they're really good - as long as you don't overcook them...

I haven't made them, but I just copied the recipe b/c it looks great! Unfortunately, I gave up desserts for Lent, so I won't be making them for a few weeks. I'll let you know how it goes when I do.
