Thre is an English Ginger Crisp cookie made by the company Peek Freans. It's thin and crispy, but not hard and crunchy like a ginger snap. Each cookie has 1 gram of fat, and I would love to try to make them. It may well be a rolled kind of dough. Any ideas on a recipe?
This isn't your recipe, I'm sure, because the fat content is too high, but this was so weird I couldn't believe it. I'd bookmarked a page in one of my cookbooks with a recipe for a cinnamon-apple-oatmeal cake I'd clipped out of the LA Times Lord-knows-how-long ago (no date on page.) Not recognizing the recipe, I turned over the paper to the flip side, and there was a recipe for "paper-thin ginger cookies." Immediately, I thought: Wasn't someone on the CL board looking for a thin ginger cookie recipe? And I was all ready to post it. Then I noted that, the recipe is cut off after 3/4 of the ingredients are added! Ah well...
I checked a couple of cookbooks and while I located a couple of recipes for English Gingersnaps, they seem to be thicker than what you're looking for, certainly higher in fat. Sorry. http://www.cookinglight.com/bbs/frown.gif
