View Full Version : ISO recipes using bought frozen bread dough
Hello - I recall so many recipes from CL using the storebought loaf bread that is frozen, but of course now that I have several loaves I'd like to use up, I can't remember where or what the recipes were. The only one I am able to recall is Citrus Pull-Apart Rolls (not sure that's the name). Could anyone enlighten me as to others? Thanks - my mind does not seem to be functioning properly lately! (I have most all the mags and annual books, so just the names would help!)

There is one from several yrs ago, but I can't remember the name. It is really good, you cut up the dough and roll the pieces in cinnamon and sugar, put in bundt pan and drizzle with a cinnamon, sugar, butter mixture. It might be called Monkey Bread. I am sure someone else will know. Sorry I'm not much help, but hopefully this will jog someone's memory!

That one is monkey bread. I have found that recipes like monkey bread, where someone makes their own dough is easier with frozen dough - or the cans of pillsbury dough. So I'm sure there are alot of options out there - of course I don't know any besides monkey bread.

In the Jan/Feb 2001 there is a recipe for olive bread that uses a frozen dough. The olive recipe followes these directions that I think you could use with a variety of things: thaw dough and roll out to a rectangle, fill with a filling, roll up and bake. My neighbor fills hers with a mixture of browned and drained sausage and hamburger, cheese, seasonings. You could put meatballs and your favorite red sauce. You could put slices of meat, Ham, Turkey, etc and slices of cheese, all of these would work for a main course sandwich.
Or you could spread the dough with your favorite spices and cheese or butter, and serve with pasta, etc. Hope these help!

I make stromboli out of frozen bread dough. I just roll it out pretty flat and add sliced tavern ham, pepperoni, sliced onions and green peppers, cheddar cheese and a spinkle of basil. Roll it up and bake it til it browns. cool and slice. WONDERFUL! I've always thought of frozen bread dough as a white canvas....add to it what you like, bake and enjoy.

Here's one. I know that it is in a CL book but I don't remember which one. Thank goodness for the search function on this bb! I have always wanted to try this:
SPINACH-FETA BREAD
1 1-pound loaf frozen white bread dough
1 cup (4 ounces) crumbled feta cheese
1/3 cup (3 ounces) 1/3-less-fat cream cheese
1/2 teaspoon dried oregano
1/4 teaspoon salt
1 (14-ounce) can artichoke hearts, drained and chopped
1 (10-ounce) package frozen chopped spinach, thawed, drained, and squeezed dry
3 cloves garlic, minced
1 large egg white
cooking spray
2 tablespoons (1/2 ounce) grated fresh Parmesan cheese
1. Thaw dough in refrigerator 12 hours.
2. Combine feta and next 7 ingredients (feta through egg white) in a bowl.
3. Roll dough into a 16x10-inch rectangle on a lightly floured surface. Spread spinach mixture over dough, leaving a 1/2-inch border. Beginning with a long side, roll up jelly-roll fashion; pinch seam and ends to seal. Place roll, seam side down, on a baking sheet coated with cooking spray. Cut diagonal slits into top of the roll using a sharp knife. Cover and let rise in a warm place (85 degrees), 1 hour or until doubled in size.
4. Preheat oven to 350 degrees.
5. Sprinkle Parmesan cheese over the top of the roll. Bake at 350 degrees for 45 minutes or until golden.
There is a a stuffed sausage bread with cheese & vegetables from an old Bon Appetit book that I have made over the years that is really good! I tried a search on Epicurious but had no luck. I will have to look for it tonight.

You can also improvise and create a great deal of wonderful calzones...
Just divide a loaf of bread dough into 6 parts, roll into a circle, fill and bake at 400 for 20-25 minutes (or until golden).
Some good fillings:
Spinach and mushrooms (with alfredo sauce, if it's on hand)
Pizza sauce and toppings
Eggplant, zucchini, onions and seasonings
Really, you can just throw any of your favorite ingredients together and they turn out wonderfully. They reheat well as leftovers as well... and can be frozen...

I did a search for French Toast Casserole and five threads came up. As I was scanning for the recipe, I came across both the recipe for Cinnamon Bread Rolls and the Citrus Cream Cheese Pull Apart Rolls. Just go through each thread and you'll find them. The threads are not long and it will probably only take you a few minutes.

In the same issue as the citrus cream cheese pull aparts and the spinach feta bread mentioned above (I think 12/99 issue?) was an apple brie braid with frozen bread dough. It was delicious. You could also use it for pizza crusts, dinner rolls, breadsticks etc... And by the way, my husband absolutely loves the CL Monkey bread.

Here is the Sausage Bread recipe that I mentioned yesterday from an old Bon Appetit "Too Busy to Cook? from 1988 that is one fo my all-time favorites.
I have not made this in a long time and have never "lightened" it, but I don't think that it would be difficult - especially using hot turkey sausage (even experimenting with one of those vegetarian "meats" or even without meat) and cutting back on the butter and using a little less cheese. Have fun with this and I am interested hearing about any lightening that you have done with this!
Crusty Sausage-Pepper Bread (makes 2 loaves)
1 lb hot Italian sausage, casings removed
2 1/2 cups grated cheddar cheese
1/2 cup finely chopped onion
1/4 cup seeded and finely chopped green bell pepper
1/4 cup finely chopped celery
2 jalapeno chilies, finely chopped
1 16 oz. loaves frozen bread dough,thawed
2 Tablespoons (1/4 stick) butter, melted
Cook sausage in heavy medium skillet over medium-high heat until browned, about 5 minutes. Remove sausage with slotted spoon; drain on paper towels.
Preheat oven to 350. Grease 2 baking sheets. Combine sausage,cheese, onion, bel pepper,celery and chilies in medium bowl. Roll each dough piece out on lightly floured surface to 9 X 16-inch rectangle. Transfer to prepared sheets. Spread half of sausage mixture evenly over each piece of dough, leaving 1.2 inch border. Roll up as for jellly roll starting at 1 long side. Brush each with butter. Bake until golden brown, about 40 minutes.
Serve with tossed green salad. This is incredibly filling.
