View Full Version : Question about freezing chicken stock/broth

This probably is a silly question, but ...

Bought some Trader Joe's organic chicken stock in 32-ounce containers. I seldom need 32 ounces at once.

Label on the container says, "Refrigerate and use within 7 days." (Maybe it's 14 days. But something like that).

Is there any reason why I couldn't freeze the leftover stock? I know this seems obvious, but I'm wondering if I'm missing some food-safety/quality point here.

Nope! You are fine freezing it. As a matter of fact, I sometimes make my own stock from leftover chicken bones, and put it straight into the freezer (after it cools, of course!) so I'll have it when I need it.

Helene--I freeze stock all the time. one helpful thing is if you can freeze it in an ice cube tray. I actually measured the amount of liquid it takes to fill one little cube pocket (can't remember now of course, I think it's 2 Tbl, I wrote it on the bag)--that way, I know how many cubes I need to pull out to get whatever amount of stock I need.

I freeze chicken stock all the time, too. I freeze it by the quart in a bread pan. It makes a nice, stackable "brick," (which I take out of the pan after it's frozen and put in a FoodSaver bag). This makes it easy to store in the freezer.

I also freeze it all the time. I really like the idea of freezing it in ice cube trays so you know exactly what measurement you have. Thanks for the tip, Gilgamesh37!:)

I freeze stock all the time too. I did hear Alton Brown say that you need to boil homemade stock before you use it again to make sure you get rid of any pathogens (he's really food safety conscious). Trader Joe's stock is ok because they are aseptically packaged. I love their stock.
