I remember how great this recipe was. But I can't find it anywhere and was planning on making it tonight. Can anyone please post this for me. PRETTY PLEASE!!!!!!

I think this is the correct one. It doesn't have her name on it, but I'm pretty sure this is it.
CHIPOTLE ENCHILADAS
3 half-breasts chicken, cooked and cubed
9 oz sharp cheddar cheese, grated
3/4 c minced onion
Sauce:
2T butter
2T flour
1 c beef broth
1 c water
1 t cumin
3 cloves garlic, minced
1 t oregano
3-4 canned chipotle chiles, seeded and minced
2 T adobo sauce from can
2 T sour cream
Melt the butter in a skillet. Stir in flour. Cook this roux until it is light brown. Remove pan from heat and slowly stir in
broth. Place pan over medium heat and whisk in water. Add the spices, garlic, chiles, and adobo sauce. Simmer
uncovered for 20 minutes. Whisk in sour cream.
Heat some oil in a skillet. Lightly fry a corn tortilla to soften it. Place it on a plate and fill with 1T cheese, 1T onion,
and 1T chicken. Roll and place in a 9" x 13" dish. Repeat 12 times. Cover the enchiladas with the chipotle sauce. Top with any remaining onions and cheese. Bake at 375 degrees for 8-10 minutes, just until the sauce bubbles.

How do you think these would be if I replace the chicken with hamburger meat? I would think it should be fine. DH is too picky!
PAMMELA - absolutely! I made mine with shredded beef (see that link above) and it was awesome. I'm sure it would be fab with ground beef (or pork tenderloin for that mattter... hmmm new ideas to try!)

I think hamburger would be fine, personally. But I wonder if this recipe would work with flour tortillas? That's what I have an abundance of (thank you, Costco) and I don't want to have to go to the store for one item.
Doesn't sound good to me - might be too chewy and not have that yummy corn flavor that I think is important in enchiladas.

I made enchiladas with flour tortillas last week, and it was great! I like them with either corn or flour, you just get a little different texture. I would make them!

Susan,
I have a friend who only uses flour tortillas in her enchiladas. It's ok if your mind set is not for the traditional taste and texture.

I made the Chipotle Enchiladas for supper tonight. I poached the chicken last night with a little garlic powder in the water. The only thing I did differently is to use chicken broth instead of beef broth because the container was already open, and I used flour tortillas instead of corn because the grocery store I went to did not have any flour tortillas. I didn't fry them in oil because they were very fresh and didn't seem to me to need any softening.
This was so delicious. I don't think I've ever had enchiladas before. It was really easy to make and really very tasty.

After having these on our to-try list for some time, we finally made these last night -
They were really fabulous and well worth the wait - thanks Lorelei!
Now I just have to have a talk with my DH, who tried to play Mr. Tough Guy and added an EXTRA chipotle. My mouth is still tingling a little ... ;)
Still worth it though!

Just bumping this up to add a variation.
This is BY FAR DH's number 1 requested recipe. Last week I planned on using the white meat from a roasted chicken from Sam's. Well..someone had snacked on it and I only ended up with a cup of chicken. I sauteed some zucchini (small diced) and used a cup of that mixed with the chicken then proceeded with the recipe. It was FABULOUS. We love this recipe anyway but I think I will start using 1/2 vegetables and 1/2 chicken when I make it. YUM. Good thing it makes 10 so we don't have to fight over the leftovers. :)

We find that subbing some veggies for the chicken is great too! I've used everything from spinach... to kale... zucchini to corn... and I've even subbed black beans or refrieds for the chicken.
I have to confess that I also occasionally make these with flour tortillas when I don't have corn around.
Glad you enjoyed. :) This is a staple around our house. I've just about stopped buying canned enchilada sauce since the sauce in the recipe is so easy to whip up!!

Great ideas lorilei. I will experiment with all of them. I think it is the chipotle's in the sauce that really makes it for my DH so I make and freeze the sauce a couple times a month.
