View Full Version : i need a lowfat spritz cookie recipe!!!!

i hope someone has one. i need to have a lower fat spritz cookie recipe. the one we have is 3 sticks of butter and i can't in good faith serve them...way too fattening. i was hoping someone would have some suggestions and recipes, maybe even some variations. thank you

You know, I can't imagine spritz cookies without a lot of butter-- the buttery quality is a large part of what makes them work.

I looked through my cookie stuff briefly, and so far haven't found anything with less than 1 1/2 sticks of butter (BUT-- that one uses almond paste, which for all I know may be just as bad or worse!)

I'm curious. If I turn up anything with less butter, there's always the possibility that this may be simply because the yield of the recipe is less. How many dozen cookies does your recipe make?

Gail has made a good point about the yield. I just checked my Spritz recipe and it calls for 1 cup butter and makes 5 dozen cookies. Is that any less than yours when you consider the total number of cookies made? I think Cooking Light is scheduled to do an article on low-fat cookies in their holiday issue. Maybe they will have a good Spritz recipe with reduced fat content.

thanks for researching your recipes. the one i had makes about 7 dozen.
i was rummmaging through some older cookbooks last night and found another spritz one with about the same as yours has...but it also had 4 other spritz cookie recipes ... a double peanut, coconut-cocoa, nutty and a gingerbread one. they all came from a better homes and gardens cookie book (1987 printing) ...but they are appro. a half cup of butter for 4 dozen (doulbe peanut) - because it also has peanut butter...
the nutty spritz has a cup and makes 5 dozen, gingerbread is 1 cup and makes 4 dozen so i think i can play around more with some of these and try some variations now. but please let me know if anyone finds anymore. thanks

Spritz cookies are butter cookies that are forced through a press with changeable cutters on the end.

I never saw this post but did a search before I posted. I just made these tonight - my mother had a request for a cookie w/out chocolate. I had the ingredients for these. How simple and light. My recipe called for butter but I just used margarine...great with coffee! If anyone wants my recipe, let me know...

I think it'd be almost impossible to lighten spritz cookies simply because they must be the right consistency in order to get them to come out of the press correctly. I used a recipe out of my Joy of Cooking cookbook to make spritz cookies for Christmas. They were so good, but most likely very high in fat. I'd love to see a lowerfat version, but I have a feeling it doesn't exist.

SpritzCookies

1 C. Butter (I used margarine)
2/3 c. sugar
1 egg
2 tsp vanilla, almond or lemon flavoring ( i used almond)
2 1/4 c. flour
1/2 tsp. salt.

Heat oven to 400
Beat the snot <word of the week for me> out of the butter through vanilla til creamy (Kitchen-Aid mixer here)
Stir in flour and salt. It says to chill for easier pressing but I just did the spoon cookie approach and they turned out fine.

that's it! Simple!

Bake 8 to 14 min. until light golden around edges. makes 6 dozen
Can add food coloring.
