I just made a vegetable soup and it is really sweet. I think it is the vegetable stock (usually use chicken). The soup has vegetables (including kale) and chickpeas in a crushed tomato/vegetable stock broth and is seasoned with garlic, cumin, oregano and chile powder.

Any suggestions on how to tone down the sweetness?

Thanks,
Carrie

You might add a little balsamic vinegar. That usually brightens up the flavors and maybe it will help the sweetness. Try it a teaspoon at a time to try it. Let us know if it helps.

Along the same lines of ElinnorC's suggestion, you might what to add something acidic to balance out the sweetness. Try a little lemon juice a tsp at a time until it's to your liking.

Yay! I used 3 teaspoons of balsamic vinegar and it worked. It is still sweet, but now it is brighter and balanced.

Thank you so much.
