View Full Version : Is there a substituite for cornstarch?

That's about it - I'm making a sauce that calls for cornstarch (a low-fat hollandaise that someone posted a while back). Can I sustitute anything for it - or do I need to go to the store?

You can use Arrowroot starch (aka St. Vincent) in place of cornstarch.

My Complete CL Cookbook says that you can substitute 2 tablespoons all-purpose flour or granular tapioca for 1 tablespoon of cornstarch. I have never tried this though . . .

I love arrow root as it makes for a very clear sauce. I use flour or cornstarch when the appearance doesn't matter.
