View Full Version : Need Main Course recipe for Progressive Dinner

The Chicken Florentine recipe in last months cooking light may be good for that dinner. It is good, easy, can stay warm in the oven and makes a lot. My husband is very picky, not fond of casseroles and wants me to make it again. I also went to a dinner party where they served the dish and it was a hit with everyone

Three other couples on our street and my husband and I are doing a "progressive dinner " type evening and I have the main course. As we will be attending two other courses before coming to our house for the main course, any suggestions for something that I can make ahead and keep warm - this is my first time posting and also my first time to participate in this type of dinner.

Just to be on the stupid side, :0 so a progressive dinner party is just go to one house for maybe apps? One house for Salad/soup and then another house for main course? Do I have it right? Never heard of this before...Hmm. Sounds interesting. What else goes on?

Thanks everyone for the great suggestions - I like the idea of the chicken florentine. luv2cook - this is my first participation in a "progressive dinner" so I'm not really sure except, we are just planning to spread the meal out for 4 courses at 4 different houses on our street. I think it could get more complicated than that with more people involved, but we just want to get a small dinner group together to have different type evenings and started with this thought - a chili cookoff is our next planned event.

Dear Ceecee: Our neighbors have had a progressive dinner for the past several years on New Year's Eve. We have five couples, as we add a "Toast" to the Appetizer, Salad, Entree, Dessert foursome.

We served prime rib this past NY eve--we all live close enough that we could slip home between appetizer and salad to take it out of the oven and let it rest while salad was being served. This was a very easy recipe-- we put a spice rub on the prime rib and made sure we used a thermometer.

One year we had a beef stroganoff that had cooked all day, and one year there was a stuffed pork loin roast. These types of dinners are a lot of fun because everyone goes all out on their tables, using lots of candlelight, etc. The best thing, though is the camaraderie, the chance to interact with adults only (all our other neighborhood get-togethers do include kids) and eat great food! Hope yours is very successful.

If you want the beef stroganoff or the prime rib recipe, please let me know.

What about the Beef Carbonnade from the Back to the Best section in March? It cooks in the oven for 2 hours and then is served over noodles. Would there be 10 minutes to cook up the noodles before eating? Otherwise you could have them cooked and just let the beef mixture heat them or refresh them in hot water...

I had the main course at New Years, and made the Shrimp Diavlo from CL. I made the sauce the day before, had the grocer clean the shrimp, so all I had to to was cook the pasta and shrimp that night. It really worked well and everyone was quite impressed!

Kelleysuea - what issue is the shrimp diavlo in? I still reading recipes and trying to decide - the dinner isn't till Feb 3 so I have a little time.

An update on the Progressive Dinner Party - turned out to be a great evening - I decided to make the "Chicken Enchilada Casserole" from CL Complete Cookbook (pg 349) and some yellow rice. Everyone loved it and it was sufficient for 8 persons, especially since we had enjoyed appetizers and salad courses at the other homes. I tried a fun game on everyone (made a list of ingredients from the casserole and added two extras and asked them to choose one ingredient not in the casserole) There was a prize for the winner(s) - a catcus plant from the table arrangement!
