First, let me say my experience with souffles is EXTREMELY limited. However, I followed the recipe carefully and was anticipating something wonderful, since this was in the "Greatest Hits" column. I just kept "digging" for that deep chocolate flavor, but came up with hints of an eggy taste and texture. I didn't even finish mine - just didn't have the depth I wanted. On to the Chocolate Chunk Bread Pudding - I missed that one but am looking forward to trying it!

I made this also. It is pretty good, not as good as the Rich Chocolate Souffle Cakes in December 03, but not bad. I didn't have 6 oz. ramikins so I used coffee cups. They worked just fine and they looked nice too. The best part about this recipe is taking the souffles out of the oven. They must have risen at least 2 inches above the cup. My daughter thought that was great. I also left off the pistachios. Who has 4 teaspoons of pistachios around the house? Next time I make this I will increase the cocoa powder to give it more depth and flavor. Although my DH thought they were pretty good as is. (He will eat anything chocolate.)

I must agree with your assessment of the appearance, catts - they rose so beautifully and looked pretty with the nuts on top. I love the idea of the coffee cups! It was just the flavor that was lacking for me. DH also gobbled his up!
