This is probably a really dumb post, but is there actually a recipe for pickled eggs or do you just plop them into vinegar???????

While I myself can't imagine eating one of these, I did find you a recipe. It is from the Woman's Day Encyclopedia of Cookery. I'm not sure about the green gingerroot, maybe regular gingerroot would be okay.

Pickled Eggs

12 eggs
4 cups cider vinegar
1 tbs peppercorns
1 tbs allspice
1 tbs whole cloves
1 tbs green gingerroot, minced
1 tsp salt

Cover the eggs with cold water, and bring to a rapid boil. Cover, and let stand for 15 minutes. Drain, and cover with cold water. Remove shells. Bring remaining ingredients to a boil, and simmer for 10 minutes. Put eggs into hot sterilized jars, and strain hot liquid over them. Seal and keep in a cool place.

Thanks Sneezles! I love them and cheat making them - I buy a jar - eat - then keep the brine - but think that can only go so far - thanks so much - think I might just eliminate the gingerroot. Very nice of you to go to the trouble. http://www.cookinglight.com/bbs/wink.gif

Are they really that good? I love hard-boiled eggs but have never tried pickled. Have had customers at the bar we own ask for them on the rare occasion.

We have always made pickled eggs with canned beets(including liquid), cider vinegar, and sugar. Let them pickle overnight and the eggs turn a brilliant pink on the outside and when you slice them they look like little sunsets. Very pretty and tasty too! My DH and his family love them and make them for Easter or whenever they get a craving. I have an exact recipe if you need it!

This may sound silly.. A friend of mine who LOVES pickled eggs saves the brine from jars of store bought pickles and just plops hard-boiled peeled eggs into the same jar. She adds garlic & more vinegar, waits a day, & eats them. I am not a fan of them, but I thought I'd add her version. Nullsy - could you please post your recipe. The canned beets and eggs sounds great as well - I do pickle beets - guess same type of brine.

Sneezles - they are amazing - if you like hard boiled eggs - I am sure you would love them - and yes - they very much a bar thing - I want the whole jar when I start!!!!!

Lena, sorry it took so long to get this to you. The twins had me going all day and I couldn't get to the computer. Anyway, this is the recipe we always use for pickled eggs.
Enjoy!

PICKLED EGGS(WITH BEETS)

2/3 cup sugar
1 teaspoon salt
1/2 cup cider vinegar
3/4 cup beet juices, saved from canned beets
12 hardboiled eggs, peeled
1 14-16 ounce can sliced or whole beets, drained and liquid reserved

Mix together sugar, salt, vinegar and juice until sugar is dissolved. Place eggs and beets in a large container. Pour the dressing over them and refrigerate overnight. To serve cut eggs in halves, quarters or slices.

These are great by themselves or in salads!
