Does anyone have a good Oatmeal Raisin Cookie recipe? I usually stick to chocolate chip, but these are my Dad's favorite and it's his birthday. It does not have to be a CL recipe.......he would actually probably prefer the "real deal"!

If you have a box of Quaker Oats, my favorite recipe for Oatmeal Raisin cookies is listed under the lid.
Cooking Light does have an adaptation of the recipe under the lid that tastes great. You can't even tell they are low fat. The recipe is just the same, only the 1 cup butter is cut to 1/2 cup, the 2 eggs are replaced with 1 whole egg and 2 egg whites, and 3 tablespoons of light corn syrup is added to the creamed mixture. I've even added chocolate chips to the recipe with excellent results.

AD- Is the texture of the CL revised Quaker Oats recipe close to the texture (chewy, not cakey) of the original Quaker Oats Oatmeal Raisin cookie recipe? (I can remember cakey type cookies when I make a recipe using a little corn syrup.)
I haven't really tried the original recipe, but I have tried many high fat oatmeal cookies, and I will admit the taste and texture is just as good as those. The worst results come from overbeating or using applesauce. I don't like using oil or fruit purees in cookies either. These are perfect in taste and texture. Much of the texture depends on how they are baked. To avoid a cakey texture in any cookie, just flatten the dough after you drop it. You can't really tell these cookies are low-fat, though I would not be able to compare them to the original.

AD-Thanks for the quick response! I will have to give them a try. I too do not like applesauce in my cookies. (Perhaps, this explains why I was in the minority that did not care for the Puffed-Up Choc. Chips cookies in the J/F 2001 issue.)
AD, do you have CL's recipe in MasterCook? If not, do you know which one of their oatmeal cookie recipes it is? Thanks. Always in search for a good cookie recipe.

Hi, Here is my recipe for oatmeal cookies.
I make them all the time. The original was

LOW FAT OATMEAL COOKIES

Low Fat
Amount Measure Ingredient -- Preparation Method

1 Cup Unbleached Flour
1 Teaspoon Baking Powder
1/2 Teaspoon Baking Soda
2 Teaspoons Cinnamon
1/4 Teaspoon Nutmeg -- Ground
1/8 Teaspoon Cloves -- Ground
1/4 Teaspoon Ginger -- Ground
1/2 Teaspoon Salt
2 Tablespoons Margarine
1/4 Cup Motts Applesauce
1/2 Cup Sugar
1/2 Cup Brown Sugar -- Packed
1/4 Cup Egg Substitute (or 1 whole egg)
1 Teaspoon Vanilla
1 1/3 Cups Rolled Oats
1/2 Cup Raisins
Preheat oven to 375° (350° Convection). Lightly spray cookie sheet with Pam.
In medium bowl, mix flour, cinnamon, cloves, ginger, baking powder, baking soda and salt. Set aside
In large bowl, whisk together margarine, applesauce, granulated and brown sugars, egg substitute and vanilla until margarine breaks into pea size pieces.
Add flour mixture to applesauce mixture. Mix well. Fold in oats and then raisins.
Drop rounded teaspoonfuls onto cookie sheet, 2 inches apart. Bake for only 7 -9 Minutes.(Rotate baking sheets after 4 minutes.) Remove from oven and cool on cookie sheet for 5 minutes. Remove and place on cooling rack.
Yield:
"55 Cookies"
Customized from the original, More spices, and margarine instead of shortening.
Pat, My recipe IS in Master Cook and was in the Sept. 1997 issue as "Oatmeal Spice Cookies." I don't use any of the spices, except 1/2 tsp. of cinnamon. If you look, it's similar to Quaker's as I mentioned above.

I have had this ridiculously easy recipe for too many years. It really is good and you can add raisins.
Betty's Oatmeal Cookies
3 cups fine oatmeal
1 cup brown sugar
1 cup flour
1/2 tsp. salt
1/2 tsp. soda
Mix above
Add:
1 cup butter/margarine
1 tsp. vanilla
1/4 cup boiling water
Bake 400 x 5 minutes

I love the coconut-macadamia nut cookies from December 2000 (?). They have golden raisins and are delicious!
