I got my new issue of Light & Tasty yesterday and saw this recipe and decided to give them a shot this afternoon. I've never made homemade granola bars before, but these were very easy and really yummy! They have that same kind of chewy/crispy texture as the Quaker Chewy granola bars, if you're familiar with those. I used full-fat peanut butter, regular skim milk (didn't want to bother opening a can of evaporated milk for 1 Tbsp), added extra cinnamon and allspice, and omitted the nuts. These were great! They'd be good with all sorts of combos of chips, nuts, and dried fruits. I think next time I'd add some extra dried cranberries and chips to them as I'd like to be guarnteed something in every bite. :) But even without the added chips and fruit, these granola bars are tasty. They have a nice oat-y, slightly sweet flavor to them, with a mild peanut butter taste and hint of cinnamon. I love the texture, though, a nice hearty granola bar that is satisfying. A definite repeater!

White Chocolate Cranberry Granola Bars
from Light & Tasty April/May 2004

1/4 cup sugar
1/4 cup maple syrup
1/4 cup honey
2 Tbsp reduced-fat peanut butter
1 egg white
1 Tbsp fat-free evaporated milk
1 tsp vanilla extract
1 cup whole wheat flour
1/2 tsp baking soda
1/2 tsp ground cinnamon
1/4 tsp ground allspice
2 cups old-fashioned rolled oats
1 1/2 cups crisp rice cereal
1/3 cup vanilla or white chips
1/4 cup dried cranberries
1/4 cup chopped walnuts

In a large bowl, combine the first seven ingredients; mix well. Combine the flour, baking soda, cinnamon, and allspice; add to the sugar mixture. Stir in the remaining ingredients.

Press into a 13x9-inch baking pan coated with nonstick cooking spray. Bake at 350 degrees F for 18-20 minutes, or until golden brown. Score the surface with shallow cuts, making rectangular bars. Cool completely on a wire rack. Cut along score lines.

Yield: 2 dozen bars
Per bar: 109 cals, 3g fat (1g sat fat), 1mg chol, 57mg sod, 20g carbs, 2g fiber, 3g protein

LOL, Kayla! I figure I owe everyone on the BB a few recipes, since I've taken so many great ones in the last couple years. So you'll just have to suffer through while I get my revenge! ;) :D

Kari, do you think these would be good with butterscotch chips instead of white? I'm more likely to have the butterscotch chips on hand.

I'm not a huge fan of butterscotch, but I certainly think they'd work well in these granola bars. I also think cinnamon chips, peanut butter chips, or chocolate chips would be good. This recipe will work well with so many combinations, so feel free to play around with it! :)

On a snack making kick today and made these this morning. A good crispy-chewy texture and a nice, not too sweet flavour. Thanks for posting Kari.
