View Full Version : Review:Tuscan White Bean Soup w/Prosciutto & Olive Bread

I made both of these last night. I liked the soup, espcially with the prosciutto very tasty. I did, though, use 2 cans of Chicken broth because one was not quite enough for what it called for so instead of the 1 cup of water I threw the second can in. This is a keeper. Olive Bread was ok. It was easy enough to make and tasted good, the kids wouldn't touch it though. It also turned out to look more like a struesel after I cut it. Perhaps I didn't wait long enough for it to cool. The bread between the twirl of olive mixture went flat for me, not like the photo in the mag.

I had the soup at my supper club and thought it was fantastic--had a really fresh taste. I plan to make it sometime soon.

I was hoping someone would post a review on this!!! Thank you!! Now I will have to make it this week. I was also curious about the olive bread. It looks great in the magazine. However we all know that things don't always turn out as we would hope....

One of our esteemed employees, Ellen Carroll, is scheduled to be a guest on the Today show on Tuesday morning making this recipe. Just in case you would like to see how she makes it!

Well, I taped the Today show and there was no CL segmemt. However, at the end of the second hour, Katy referred to a third hour which we don't get I guess. It was probably on then. Just my luck.

One of the ladies in my CL Supper Club and I took the day off and went cross-country skiing. We brought along a CL Picnic Lunch and this soup was one of the recipes we made. We both really liked it. The flavors were somewhat mild but it tasted warm and delicious from a thermos after several hours of skiing!! http://www.cookinglight.com/bbs/cool.gif

I will make it for my family sometime soon, probably with some extra garlic...
