I just made the buttermilk oatmeal pancakes from the Complete Cooking Light cookbook and wow were they good!
My husband always enjoys the country griddle cakes (made with cream of wheat) from Pancake House so we are always looking for similar recipes. This one caught our eye this morning, but we were out of quick cooking oats http://www.cookinglight.com/bbs/frown.gif But.... we did have several packets of cream of peach instant oatmeal, so we just substituted 1/2 cup of that (takes a little more than one packet).
These pancakes were delicious... might have something to do with the bit of peach flavor, but they're our new favorites--very light and fluffy and filling. A serving size is 2 pancakes, but I had 3 and was full with that (usually I have even more).
Just wanted to share a breakfast treat!
