Lemony Asparagus-Mushroom Stir-Fry CL 03/04

Just made this.

Super easy, very springy - bright green asparagus and snap peas (I used defrosted snap peas - much easier than top'n'tailing fresh snow peas, and snow peas often kinda limp here anyway...) DELICIOUS garlic and lemon flavor. I added lemon juice to the zest.

But what I really wanted to recommend is
Lemony Asparagus-Mushroom Omlettes with Feta - just add some Lemony Asparagus-Mushroom mixture to the center of an omlette, and spinkle with feta. To die for - and only 4 points!! (Made with one egg, one egg white, a splash of ff milk, then 1/8-cup of feta.)

Thanks for the reviews, Kuvy and Peggy. Now that asparagus is coming into season, I will have to give this one a try. The omelette sounds yummy, too! :)
