I am thinking about making the "Arroz con Pollo" from the March 04 issue tomorrow night. Has anyone made this specific recipe yet? What did you think?

I have not tried this one, but it did get a "bad" mark on this thread (http://community.cookinglight.com/showthread.php?s=&threadid=55022&highlight=pollo) . It was also noted that it could have been cook's error.
I think that Tara (tuff2000) was also wondering about this one. Maybe she'll pop in here and let you know if she tried it. :)

Uggh! I wish the reviewer wrote more than "bad," so that I know what they didn't like. I may still make it anyway, will let you all know if I do.

I made this recipe for dinner tonight and will give it only positive reviews.:) The only changes I made were using all chicken thighs and substituting pearl rice for arborio rice because I couldn't find the arborio rice at the grocery store. I was afraid that the rice would not cook in the 18 minutes specified but it actually did. The only problem I had was the chicken thighs were not quite done when the recipe stated. So, I pulled them out and microwaved them for a few minutes when I added the peas to the rice mixture.
Overall, I thought this dish had good flavors. It was very colorful and made a nice presentation on the table. I hope you do still try it. It would be interesting to know why the person on the other thread didn't like it.:confused:

Peggy thanks for your review. I meant to post this yesterday since I ended up making this recipe Tues evening.
Both my husband and I enjoyed this version of Arroz con Pollo. It took a bit of time to make but was a very simple recipe. The chicken came out moist & the rice had a good flavor. I will make this one again! The leftovers last night were really good too! I followed the recipe almost exactly even using the Arborio rice. Only subsitution was I used baby sweet peas instead of petite green peas because I couldn't find them in the store. Next time, I'll probably add a little more peas and maybe a few less pieces of chicken.
I gave this recipe 4 out of 5 stars on my website review. It's a good comfort food.

I was lukewarm on this one. It looked beautiful and the flavors were good, but I really don't care for chicken thighs and drumsticks. Next time I'll substitute bone in chicken breasts.

ARROZ CON POLLO
Recipe By :Better Homes and Gardens (1951)
Serving Size : 2 Preparation Time :0:20
Categories : Mexican Poultry
Rice
Amount Measure Ingredient -- Preparation Method
-------- ------------ --------------------------------
2 Pieces Chicken Breast (large or 3 small) -- Skinned/Boned
1 Tablespoon Olive Oil
1 Medium Onion -- Chopped
1 Clove Garlic -- Minced
1 Large Can Sliced Tomatoes (28 oz)
1 Cup Rice
1 Teaspoon Salt
1 Dash Red Pepper Flakes
Pepper -- Freshly Ground
Paprika
1 Large Green Pepper -- Sliced in Rings
Sprinkle chicken pieces with pepper and paprika.
Brown them quickly in a little olive oil. Remove to casserole with a slotted spoon. Saute onion and garlic in the same pan. Add to chicken in casserole. Sprinkle rice around chicken. Add salt and canned tomatoes. May need to add more water so that rice will cook properly. Cover.
Bake in 350 degree oven for 1 1/2 hours Add pepper rings during last 20 minutes..
Can also be cooked in Micro on High until mixture starts
to cook. Then reduce power level and cook about 1/2
hour on Medium. Test rice for doneness. May require more
water. Add pepper rings during last 5 minutes.

I was the one who gave the bad review. I didn't say much because I think it was my rice. It looked great, and the flavors were great but after 1 1/2 hours of cooking the rice was still hard as a rock. I'm going to try it again though with different rice, and I hope it turns out better. I am rice impared though. I never feel right giving a bad review for something that just plain didn't work- esp. if I'm the first one because I'm afraid I'll sway someone else!
