OK, I'm totally out of ideas once again. Actually, right now I'm absolutely starving so I'd eat anything, but I'm at school and will have to settle for my grapefruit as lunch. :(

But as far as dinner is concerned, I'm stuck. I plan to stop at Whole Foods tonight on my way home, so I can pretty much pick up anything.

What's the plan for tonight, oh creative ones (and nop-so-creative ones...)?

Tonight we're having salmon w/ kiwi-mango relish (CL 3/04) served with couscous and roasted broccoli. YUM!

We are having Brocolli/Garlic Sauce. I'm going to add chicken to it. I did it the other night with the addition of beef and DH= inhaled it....and I left out the garlic. :o Good thing he's easy to please. :D

Tonight I'm making the Spiced Chicken and Barley from CL Complete. Also having green beans, but haven't decided on how to make them yet. I may just do Jewel's Garlicky ones unless something else jumps out at me.

I'm making calzones - dough will go in the bread machine when I'm home at lunch. I will do turkey sausage ones for my husband and veggie ones for me.

We are having the Roasted Butternut Squash and Bacon Pasta. I made it last night so I didn't have to cook tonight. Yummy, smelled so good.

I just woke up (it's only 6:45am here in CA) and we're already thinking about dinner.... lol ;)

Anyways, tonight I'm having pork medallions w/ mushrooms and onions, steamed broccoli and steamed green beans. It's one of my favorite dinners. :) Yum, yum!

Gotta make it through school, the gym, and work first...

No cooking tonight as I'm working late, but tomorrow night we are having the Moosewood recipe for Eggplant Parmesan. Probably with salad and bread.

Tonight is Roast Salmon with Thai Red Curry Sauce and Bok Choy, Minted Eggplant Rounds (both from epicurious), and sweet brown rice. I actually made this last week and loved it so much I'm doing it again, which is unusual for me.

And by totally odd coincidence, I'm also having a grapefruit for lunch! I'm not too psyched about it either.:rolleyes:

We're supposed to have grilled pork chops with Braised Kale with Bacon - although if the weather turns bad I may have bake or pan fry the pork chops! Maybe I'll try the new Tyler Florence recipe.. Dianne are you making these tonight???

I'm having Cheddar Chicken Chowder. I've never had it before, and I figure if it's really going to be Spring soon, than this week is one of my last chances to try it while we're still having "chowder weather".

We're having grilled steak smothered with goat cheese ratatouille :D DH is having some steak fries with that and I will probably have some asparagus that needs using up.

Afraid I'm not much help. I'm going to be out of town with friends. DH and DD will be eating leftover corned beef, cabbage, potatoes and Irish soda bread. I hope you find some inspiration for your evening!

we're having the Chicken Breasts Stuffed with Goat Cheese and Sun-dried Tomatoes from last month's CL. I was going to serve it with the Creamy Parmesan Orzo, but decided to go with my favorite orzo recipe from Cook's Illustrated, Toasted Orzo with Parmesan and Peas.

Tuscan Pumpkin-White Bean soup pulled from the freezer. Desert is chocolate pudding from Moosewood's Low Fat Favorites - definitely one of my favorites!

Pork Piccatta (made with medallions not pork chops).
Parmesan Mashed Potatoes
Steamed Green Beans, but if I'm adventerous I'll make the garlic vinegarette.

Oh, and salad.

Tonight I'm planning Cornflake Crusted Halibut only I'm using tilapia instead. I'll serve it with roasted potatoes and some green veggie.

I am determined to finally do up the Caribbean Chicken w/Black beans, sweet potato & lime. Every night is so busy, but tonight I'm staying put, this recipe looks so tasty:cool:

Leftover take-out Thai food. (Yes, I'm so ashamed. :o ) I have a nice combination of Mild Curry with Tofu and Spicy Basil Noodles with Chicken waiting for me in the fridge.

My SO is out of town, and it's too difficult to cook and keep an eye on our very hyper dogs at the same time (gosh, I feel like I have kids! :p )

I was looking at the recipe for, um, something like Balsamic Braised Short Ribs with Horseradish Mashed Potatoes, yesterday. Looked mighty tasty.

Only I can't have potatoes, cos this is a low-carb day... and I'm not eatin' beef right now, too high in fat... :rolleyes:

So I am improvising. Balsamic and onion kinda braised bison (leaner than chicken, I was delighted to find!) over horseradish... uh, mashed cauliflower (ya know, it kind of is reminiscent of potatoes, after a while...) and a few steamed green beans for colour and contrast.

We are having Clams and Linguine with crusty Italain bread and a green salad. I promised my 10 yr. old DS that it was "his turn" to help cook dinner! Give me strength! LOL!

We are having the lemon peppercorn tilapia from CL 03/04, rice pilaf (to use up some sad looking mushrooms and a green pepper), and broccoli. I might have to find a recipe to roast it, inspired by Kismet. And I just might give in and make tapioca pudding, which I've been saying I wanted to make for about the last two months! We'll see how motivated I am :)

I'm back on WW big time, so we're having Blackened Portobello Mushroom Salad and WW Garlic Lemon Chicken . Hopefully there will be leftovers for lunch tomorrow!

I'm in luck tonight! My mom is here...and is making her wonderful pot roast; the one I can never seem to duplicate! :rolleyes: We are also having veggies that cook with the roast, and salad. Maybe some dinner rolls. I'm just ecstatic that I don't have to worry about what to make for dinner! :) :)

When I roast it, I don't really use a recipe at all. I just cut up the broccoli into pieces, toss with a bit of olive oil, and sprinkle on whatever seasonings fit my meal. Then, I roast it at about 375 for 30 minutes or so, until it's done!

It's been a seriously lackluster food week at the old homestead, so I feel like somethin' special. Most likely the winner is going to be a lime shrimp (fresh juice and rind, worcestershire, hot sauce, touch of butter) I've been wanting to try. If not, I may make Adgirl's goat cheese/salsa combo from the dip thread and pick away at it all night.

BTW, I did a double recipe of "your" WW Hot & Sour Soup last night, Sue. Got it down to a science now and my endomorphins were sure buzzing!

LEFTOVERS!! We're finishing up the Creamy Shrimp and Gruyere Pasta I made a few days ago. I subbed scallops since I'm allergic to shrimp. I was not so thrilled with it on the first night, although the leftovers were much better. Salad, steamed broccoli, and pletzel bread are the sides.

I'm also having the fish tonight...thanks for the idea! I'm using cod, though. And steamed broccoli and chard on the side.

We just had our bathroom retiled and recaulked, though, so our whole apartment smells very strongly of chemicals. I'm sure the fish aroma will go nicely...:rolleyes:
