Goldilocks, the chunks will freeze with no problem. I sometimes leave the rotisserie chicken whole and freeze them. I like to use the double layered ziploc bags and get as much air out as possible to prevent freezer burn, but for only a week or so, it shouldn't matter.

I do the same thing with rotisserie chicken and it freezes well. I do not freeze in aluminum foil, though, because I read on this bb a while back that doing so may not be healthy.

I purchased a cooked rotisserie chicken from Costco over the weekend. Normally I take off all of the meat, cut in chunks and make trays of enchiladas for the freezer. I don't know if I'll get to the enchilada part until the weekend, so is it okay to freeze these chicken chunks? Will they taste okay when I take them out and what is the best storage - tupperware or ziploc bag? Any help is appreciated!
