View Full Version : bread that isn't cooked in the middle

Last night, I made the Pumpkin Swirl Bread and it wasn't done in the middle although i cooked it FORever. I often have this happen with really moist breads, like banana bread. Does this happen to anyone else? What do you do? Cover it with foil? Turn up the temp? Because the ends are totally cooked and I don't want them to end up dry or rubbery??!

Do you have an oven thermometer? This used to happen to me all the time when I baked quick breads. Come to find out, my oven was about 50 degrees too low.

This happened to me once when I first made my now famous banana bread. The recipe calls for 2 bananas or 1 cup. I had 2 very large bananas and knew it would measure out to be more. I decided the more banana flavor the better. Wrong! My bread did just what yours did. Too much liquid is my quess. Also, the chefs on TVFN (Food Network) say flour is different depending on the time of year. ??? Sometimes you will need to add more. I never really understood that explanation.

I had the same problem with a banana bread recipe that I have made for years. I finally determined that I wasn't putting in enough flour. I had gotten into the habit of always stirring the flour before I (lightly) scooped it - you use less flour that way. I made the recipe again except that I didn't stir up the flour first - I just measured it straight from the canister - and it turned out perfect. Try adding a little more flour and see if it helps.
